Heat a wok and add oil to it. Allow the oil to heat up.
Add cumin seeds to the hot oil. Let them splutter and release their aroma.
Stir in the chopped onions and sauté until they turn light brown in color.
Add the onion paste and continue sautéing.
Incorporate the sliced tomatoes and 1 teaspoon of salt. The tomatoes will release their juices.
Add the ginger-garlic-chili paste and mix well. Stir for about 5 minutes.
Pour in a little water and add the powdered spices - turmeric powder, red chili powder, and Kashmiri red chili powder.
Adjust the water quantity to achieve your desired consistency and add salt according to taste. Stir the masala paste.
Cover the wok with a lid.
Once the curry comes to a boil, add the fried egg pieces and cover the pan again. Cook for 5 minutes.
Add the green chilis and roasted cumin powder. Cover the pan once more.
Sprinkle coriander leaves over the gravy. Cook for an additional 5 minutes with the lid on.
Transfer the Fried Egg Curry to a serving bowl.
