Garlic egg fry is made by frying hard-boiled eggs in a rich and spicy base comprising urad dal, chana dal, mustard seeds, cumin seeds, onions, dry red chilies, curry leaves, black pepper powder, and coriander leaves along with a spice blend of coriander seeds, cumin seeds, red chili powder, salt and lots of garlic.
Make slits on all sides of 4 pieces hard boiled eggs.
Fry them in 1 tsp cooking oil with ¼ tsp of red chili powder, ¼ tsp of turmeric powder, and ¼ tsp of salt.
Blend 1 tsp of coriander seeds, 1 tsp of cumin seeds, 1.5 tsp of red chili powder, 20 pieces garlic (whole cloves, with skin), and ½ tsp of salt coarsely.
Fry 1 tsp of urad dal, 1 tsp of chana dal, ½ tsp of mustard seeds, and ½ tsp of cumin seeds in 1 tsp of cooking oil. Add 3 pieces of roughly diced onions, 3 pieces of whole dry red chilies, and a handful of curry leaves, torn into small pieces.
Add the masala mix and ¼ tsp of black pepper powder.
Add the fried eggs. Add a handful of roughly chopped coriander leaves.
Making slits in the eggs allows for proper infusion of spices.To enhance the flavor and appearance of the dish, the eggs are fried first.Onions and spices are always fried by me on a low fire. This allows for perfect cooking without burning the spices. Better results can be obtained by frying the masala mixture and black pepper separately one after the other.Fry the masala mix and black pepper one after the other for better results.
