  • 3 pieces dry red chilies (whole)
  • Curry leaves (a handful, torn into small pieces)
  • ¼ tsp black pepper powder
  • Coriander leaves (a handful, roughly chopped)

My aunt shared this recipe with me when I visited her in Delhi during the vacation of my two sons. The dish involves easy cooking yet delivers an exceptional taste and flavor experience. I recorded her cooking procedures and special techniques in my kitchen diary so that I could make the dish at home.

I prepared this dish at home for dinner one day, and my husband and sons enjoyed it. Everyone in the family told me that my egg dish was exceptionally good and unique and I should prepare it more frequently. I felt so pleased that they liked it so much, and I thanked my aunt for sharing this excellent recipe with me.

How to Make Garlic Egg Fry? (Step by Step Guide with Images)

Step 1: Make slits on all sides of 4 pieces of hard-boiled eggs.

Step 2: Fry them in 1 tsp cooking oil with ¼ tsp of red chili powder, ¼ tsp of turmeric powder, and ¼ tsp of salt.

Step 3: Blend 1 tsp of coriander seeds, 1 tsp of cumin seeds, 1.5 tsp of red chili powder, 20 pieces of garlic (whole cloves, with skin), and ½ tsp of salt coarsely.

Step 4: Fry 1 tsp of urad dal, 1 tsp of chana dal, ½ tsp of mustard seeds, and ½ tsp of cumin seeds in 1 tsp of cooking oil. Add 3 pieces of roughly diced onions, 3 pieces of whole dry red chilies, and a handful of curry leaves, torn into small pieces.

Notes

Making slits in the eggs allows for proper infusion of spices.
To enhance the flavor and appearance of the dish, the eggs are fried first.
Onions and spices are always fried by me on a low fire. This allows for perfect cooking without burning the spices.  
Better results can be obtained by frying the masala mixture and black pepper separately one after the other.
Fry the masala mix and black pepper one after the other for better results.
