Goda Masala Powder

Goda Masala Powder is a spice mix to Maharashtrian cuisine, widely used in Indian cooking. It is a mixture of roasted and ground spices like coriander seeds, cumin seeds, cloves, black pepper, cinnamon and more.

Ingredients
  

  • 4 tbsp While oil
  • 1 cup Coriander seeds
  • 1 tbsp Cumin seeds
  • 20 pieces Cloves
  • 20 pieces Black pepper
  • 3 pieces Cinnamon stick 1-inch size
  • 1 tbsp Mustard seeds
  • 2 tbsp Black stone flower (dagad phool)
  • ½ cup Dry coconut
  • 15 pieces Dry red chilies
  • ½ tsp Asafetida
  • 1 tbsp Sesame seeds
  • ½ tsp Fenugreek seeds

Instructions
 

  • Take a wok or a frying pan and heat it on your gas stove. Put 4 tbsp of white oil in it.
    (Pro tip: You can use any brand of white oil you prefer).
  • When the oil is hot enough, add 1 cup of coriander seeds.
  • Now, add 1 tbsp of cumin seeds to it.
  • Then put about 20 pieces of cloves into the wok.
  • Now, add about 20 to 25 pieces of black pepper to the ingredients in the wok.
  • Follow it with 3 cinnamon sticks of 1-inch size.
    (Pro tip: You may break them into small pieces if you want).
  • Stir everything in the wok nicely.
  • Fry it for about a minute or two so that the oil is mixed properly and the spices are cooked nicely and you can smell the aroma of the fried spices.
  • Then add 1 tbsp of mustard seeds to the content in the wok.
  • Follow it with 2 tbsp of black stone flower or dagad phool.
  • Now add ½ cup of dry coconut to the wok.
  • Then add about 15 pieces of dry red chilies to the ingredients.
  • Now, add ½ tsp of asafetida powder to it.
  • Follow it with 1 tbsp of white sesame seeds.
  • Finally, add ½ tsp of fenugreek seeds to the ingredients in the wok.
  • Now, sauté everything well for another 2 to 3 minutes.
  • When you notice a slight change in the color of the spices, turn the flame of your gas stove off. Let the spices cool down completely.
  • Now take a clean grinder, and put the ingredients in it.
  • Grind it. Check the texture and coarseness.
    (Pro tip: You may grind it a couple of times more to get a smoother texture).
  • When you are happy, transfer it to a container and your flavorful goda masala is ready to be used.

Notes

  • I prefer using best quality white oil and suggest you to do the same. This adds to the authentic rich taste of the masala mix.
  • Roast the spices till you smell the natural aroma.
  • Cool them down completely before grinding.
  • I usually grind in short intervals to get a smooth texture. Do the same.
  • You may alter the spice levels according to your taste preference.
