Kacha Gola

Kacha gola is made from freshly prepared chhena formed by adding a mixture of vinegar and water in the same proportion to boiling milk. The chhena is kneaded nicely and mixed with sugar and cooked lightly with condensed milk until it becomes a thick and smooth mixture. Smooth chhena balls are then made and coated with milk powder and finally garnished with saffron strands or nuts.

Ingredients
  

  • 1.5 liters milk
  • 2 tbsp vinegar
  • 2 tbsp water
  • 1 tbsp sugar
  • ¼ cup condensed milk
  • 1 cup milk powder to coat the kacha gola
  • Saffron strands a few, to coat the kacha gola

Instructions
 

  • Boil 1.5 liters of milk.
  • Gradually add a mixture of 2 tbsp of vinegar and 2 tbsp of water to curdle milk.
  • Strain the curdled milk on a piece of cotton cloth. Wash with cold water.
  • Wrap it nicely. Squeeze well.
  • Knead for 2 mins. Divide the chhena dough. Keep one part aside.
  • Mix 1 tbsp of sugar to one part and knead again.
  • Transfer to a frying pan. Add ¼ cup of condensed milk. Keep stirring on a low flame until the mixture separates from the pan.
  • Remove it to a separate dish. Add the remaining mixture when cool. Knead well.
  • Take a cup of milk powder in a separate plate.
  • Make balls. Coat with milk powder.
  • Keep them on a separate plate. Garnish with saffron strands.
  • Your sweet and delicious homemade kacha gola is ready.

Notes

I use vinegar and water to make chhena but you can use lemon juice or citric acid powder for the same.
You may skip coating the kacha gola in milk powder if you want.
You can use almond and pistachio pieces to decorate the kacha gola together with saffron strands.
