I came across this kacha gola recipe while viewing a local Bengali cooking show one afternoon. The description of the ingredients together with the soft texture of the sweet dish made a strong impression on me. I wrote them down and also called my mother-in-law to ask whether she knew about the recipe and for some practical tips based on her knowledge. I quickly documented all the cooking information in my notebook while adding personal reminders to help me remember important details.

I decided to test it one day after dinner and discovered that the results produced a soft and tasty kacha golas. My husband thought I had bought it from the local sweet shop; meanwhile, my sons took extra pieces from the serving plate. Notes

I use vinegar and water to make chhena but you can use lemon juice or citric acid powder for the same.
You may skip coating the kacha gola in milk powder if you want.
You can use almond and pistachio pieces to decorate the kacha gola together with saffron strands.
