Ladies Finger Pickle

Ladies finger pickle, also known as Bhindi ka Achar, is made from fresh ladies finger or okra, curry leaves, different seeds, an assortment of spice powders, and other ingredients.

Ingredients
  

  • 250 grams Ladies Finger
  • 3 pieces Lemon Juice extracted
  • 1 tsp Red chili powder
  • 1 tsp Fenugreek seeds
  • 2 tsp Mustard powder
  • 1 tsp Turmeric powder
  • 2 tsp Sesame seeds
  • 6 pieces Curry leaves
  • 2 tsp Black mustard seeds
  • tbsp Sesame oil (roasted)
  • ¼ tsp Asafoetida
  • 1 tsp Salt

Instructions
 

  • Take 250 gm ladies finger and wash it thoroughly. Set them aside to dry.
  • Cut the top and bottom of the ladies' fingers. Then make a fine longitudinal slit in the body.
  • Now, take a small mixing bowl and combine 1 tsp salt, 1 tsp red chili powder, 1 tsp fenugreek seeds, 2 tsp mustard powder, and 1 tsp turmeric powder.
  • Add 3 tbsp lemon juice to the spice mix and stir well.
  • Insert the spice mix into the ladies fingers.
  • Heat 1½ tbsp sesame oil (or you can use sunflower oil) in a wok.
  • Add a pinch of asafoetida to the heated oil.
  • Add 6 to 8 curry leaves and mustard seeds to the wok.
  • When the seeds start to crackle, add all the ladies' fingers to the wok. Stir-fry the ladies' fingers for a few minutes until they soften under low flame.
  • Cover and let it cook for 2 to 3 minutes.
  • Uncover and stir-fry for an additional 2 to 3 minutes.
  • Turn off the flame and add the remaining lemon juice and 2 tsp sesame seeds. Mix well.
  • Let it cool for a few minutes, and the ladies finger pickle is ready to serve.

Notes

Use fresh and tender ladies finger free from blemishes to make this pickle. This will add to the flavor, taste, and texture of the pickle. Wash and dry them properly to ensure they are moisture-free.
Slit the ladies fingers finely in a longitudinal manner. This typically helps in absorbing the spices and adds to the flavor of the pickle.
I always prefer and recommend using top-quality mustard powder. You may roast and grind mustard seeds freshly. This will enhance the flavor and taste of the pickle as well.
Cook the ladies finger on a low flame. Do not rush the process. Cover the wok to retain moisture. Stir occasionally. This will prevent burning and allow proper infusion of the spices in the vegetable. It will also enhance the texture of the pickle.
I prefer using top-quality sesame oil to make this pickle. This will render the authentic nutty taste and flavor to the pickle. However, you can use other oils if you do not have sesame oil at home.
