Masala doodh powder refers to a mixture of roasted and ground nuts such as almonds, pistachios, and more. These are blended perfectly with other fragrant spices and sugar.

Ingredients
  

  • 1 cup Almonds
  • 1 tbsp Cashew nuts
  • 2 tbsp Pistachio
  • 1 tsp Green cardamom
  • 1 cup Sugar
  • 10 pieces Fried green cardamom
  • ½ tsp Saffron
  • ½ tsp Turmeric

Instructions
 

  • Take a frying pan and heat it on a medium to low flame on your gas stove. Put a cup of almonds in it.
  • Stir the almonds for about 8 minutes to dry roast them nicely.
  • Now, add 1 tbsp of cashew nuts.
  • Add 2 tbsp of pistachio into it.
  • Add 1 tsp green cardamom pods.
  • Stir the nuts for a minute or so to dry them.
  • Turn off the flame of your gas stove and let the ingredients cool completely.
  • Now, take a clean and dry grinder.
  • Pour 1 cups of normal sugar. You may use ground sugar and adjust the amount according to your taste.
  • Now, add 10 fried green cardamom pods to the sugar in the grinder.
  • Grind it nicely into a fine powder.
  • Transfer the cooled nuts into the grinder.
  • Add ½ tsp of saffron and turmeric into it.
  • Finally, grind them into a fine powder. Your masala doodh powder is ready.

  1. The quality of nuts used to make masala doodh powder plays a crucial role in rendering the perfect rich taste and flavor. I recommend using fresh and top-quality almonds and other nuts.
  2. Roast all the nuts and spices slightly before you grind them. This is a crucial step that enhances the taste and flavor of the powder.
  3. Set the roasted nuts and spices aside before grinding to let them cool down completely. This will help attain the right texture for the masala powder. It will also make the blending process easier and faster.
  4. I prefer using regular sugar to make this powder. However, you may use alternative sweeteners if you want. Make sure you check the sweetness so that it is perfectly balanced with the amount of nuts used in the mixture.
