Mathura Peda

Mathura Peda is made from Mawa or Khowa cooked in ghee or clarified butter and mixed with a unique crumbled sugar called Boora or Tagar. It is actually molten sugar in water, which is then stirred continuously after removing from the flame until it solidifies and crumbled again to make a powder before mixing with the Mawa.

Ingredients
  

To make the Boora or Tagar:

  • 1 cup sugar
  • 4 tbsp water

To make the Mawa mixture:

  • ½ tbsp ghee clarified butter
  • 200 grams Mawa Khowa
  • ½ tsp cardamom powder

To garnish the Pedas:

  • Almond small pieces, as many as required

Instructions
 

  • Take 1 cup of sugar and 4 tbsp of water. Boil until sugar melts and remove from the flame.
  • Stir vigorously until it solidifies.
  • Crumble with the ladle. Transfer it to a bowl. Crumble further with hands to make a fine powder. Keep aside.
  • Cook 200 grams of Mawa (Khowa) using only ½ tbsp of ghee or clarified butter on a low flame for about 7 to 8 minutes stirring continuously until it melts. Add ½ tsp cardamom powder and mix nicely.
  • Remove and spread it in a bowl. Allow it to cool down.
  • Add the Boora to it. Mix nicely with your hand.
  • Take small portion of the Mawa mixture and make small balls with a dent in the middle. Put a piece of almond.
  • Your sweet and tasty homemade Mathura Peda is ready.

Notes

The Boora or Tagar is the primary ingredient of Mathura Peda. So, be patient and crumble it nicely.
Do not add the Boora when the Mawa mixture is still hot, or else the sugar will melt and the Pedas will become sticky and chewy.
I have used almonds like in traditional Mathura Pedas but you can use pistachios, cherries and other nuts.
