Mutton nalli soup is made with mutton bones (nalli), which are slow-cooked with a few powdered spices, onions, tomatoes, garlic, and herbs. Usually cooked in sesame oil, it adds to the flavor and taste.
Fry 1 tsp of fennel seeds (saunf), 5 pieces of crushed garlic and 10 pieces of curry leaves in 1 tbsp of sesame oil on a medium flame. Add 50 grams of onions (small whole pieces, peeled) and one green chili (broken in half) with a handful of roughly chopped coriander leaves when soft.
Sauté 200 grams of mutton nalli for 7 minutes. Mix ¼ tsp of turmeric powder, ½ tsp of coriander seed powder, ½ tsp of red chili powder, and 1 piece tomato (roughly cut).
Add 3 cups of water. Cover and cook for 25 minutes. When it boils, mix 1 tsp of cumin powder (roasted), 1 tsp of black pepper powder, and salt to taste.
Add more coriander leaves. Check consistency after 3 minutes.
