Oats cutlet is usually made with rolled oats, which are mixed with curd and kept aside for proper infusion. Then fresh vegetables like carrots, beans, capsicum, spinach, and paneer are mixed along with onion, ginger, garlic, and a lot of powdered and whole spices. The tikkis are then shallow-fried to perfection until golden brown and crisp.
After 5 minutes, mix ¼ cup each of finely chopped capsicum, carrot, French beans, broccoli, onion, spinach, and ¼ cup of grated paneer. Also add 1 tsp of finely chopped green chili, garlic and ginger followed by ½ tsp of turmeric powder, 1 tsp of red chili powder, ½ tsp of cumin seed powder, ½ tsp of garam masala powder, ½ tsp of dry mango powder (amchur), and salt to taste. Make small cutlets.
Shallow fry them in 1 tbsp cooking oil until brown. Remove them to fry the next batch. Transfer them to a serving plate.
A regular variety of oats can be used to make the cutlets if rolled oats are not available.Oats mixed with curd makes them healthier and easy to digest.Adding spinach is recommended for healthier cutlets but you can use chopped coriander leaves along with it for flavor.Paneer in the recipe helps in binding. You may also use gram flour (besan) or mash boiled potatoes.Oats cutlets can be shallow fried or baked.
