Take a frying pan and heat it on a low flame on your gas stove. When it is hot enough, put 1 tsp of white oil in it. When the oil becomes hot, put one dry red chili with or without its stalk and 1 tsp of Indian Five Spice Blend (panch phoron) in it. Stir them continuously to fry them until they change their color slightly.
Now, add the oranges to the pan and stir them nicely. Add 1 tsp of regular table salt and cover the pan after mixing it. Cook it for about 2 to 3 minutes. (Pro tip: Remove the seeds from each segment of the orange).
Now, remove the cover, and mash a few segments of oranges. Then add 1 cup of sugar to it and mix it nicely. (Pro tip: You can increase or decrease the amount of sugar according to your preference).
Now add 6 to 8 pieces of cashew nuts, an equal number of raisins, and 8 to 10 small pieces of mango candies to it. Mix everything nicely. Cover it and let it cook nicely for another 2 to 3 minutes. Do not add any water to it.
Remove the cover, mash a few pieces, and mix them nicely. Finally, squeeze a few drops of fresh lime juice, or about 1 tsp, let the chutney thicken down a bit, and then turn the flame of the gas stove off, and let the chutney cool down.
Now, transfer it into a bowl. Your sweet and tasty homemade orange chutney is ready to be served.
