This recipe was born out of pure stubbornness. I had it once at a restaurant and asked the chef how it was made. He smiled and said it was “a secret.” That just made me more determined. I tried five versions before I got something close.

Eventually, I think I made it even better. This made me feel proud and my husband praises me now for my stubbornness! My kids love this chutney and always ask for a second serving when I make it. Every time I prepare it now, it feels like a quiet little victory over a locked door I found a key to on my own.

How to Make Orange Chutney? (Step by Step Guide with Images)

Step 1: Take a frying pan and heat it on a low flame on your gas stove. When it is hot enough, put 1 tsp of white oil in it. When the oil becomes hot, put one dry red chili with or without its stalk and 1 tsp of Indian Five Spice Blend (panch phoron) in it. Stir them continuously to fry them until they change their color slightly.

Step 2: Now, add the oranges to the pan and stir them nicely. Add 1 tsp of regular table salt and cover the pan after mixing it. Cook it for about 2 to 3 minutes.

Step 3: Now, remove the cover, and mash a few segments of oranges. Then add 1 cup of sugar to it and mix it nicely.

Step 4: Now add 6 to 8 pieces of cashew nuts, an equal number of raisins, and 8 to 10 small pieces of mango candies to it. Mix everything nicely. Cover it and let it cook nicely for another 2 to 3 minutes. Do not add any water to it.

I always use fresh and ripe oranges to make this chutney.
Remove the seeds to enhance the texture and eating experience.
Check the sweetness of the oranges and then add sugar as required.
Fry the Indian Five Spice blend in hot oil for additional flavor.
