Paneer Hariyali Tikka

Paneer hariyali tikka happens to be a very refreshing kind of Indian appetizer that consists of cubed pieces of soft paneer, which have been marinated in a green-colored paste prepared from a combination of herbs like mint leaves, coriander leaves, green chilies, garlic, ginger, and a pinch of yogurt, giving the dish a very unique ‘hariyali’ flavor. After marination, these paneer cubes are shallow-fried using butter so that they turn crispy on the outside as well as soft inside.

Ingredients
  

  • 200 grams paneer cut into cubes
  • ½ cup mint leaves
  • ½ cup coriander leaves
  • 7 cloves garlic
  • 1 piece ginger half inch size
  • 2 pieces green chilies
  • 1 tbsp yogurt Dahi
  • Salt to taste
  • 2 tbsp water
  • 2 tbsp butter
  • ½ tsp cooking oil
  • Chaat masala powder – a bit

Instructions
 

  • In a mixie jar, take ½ cup of mint leaves, ½ cup of coriander leaves, 7 cloves of garlic, a piece of ginger (half inch size), 2 pieces of green chilies, 1 tbsp of yogurt (Dahi), salt to taste, and 2 tbsp of water. Grind them into a fine paste and pour it in a bowl.
  • Now, cut 200 grams of paneer into cubes and put them in this paste in the bowl. Mix thoroughly so that each paneer piece is nicely coated with the masala. Keep it aside for about 10 minutes to marinate properly.
  • Now, heat a frying pan and put 2 tbsp of butter in it. When it melts, add ½ tsp of cooking oil in it. Spread it nicely all over the surface of the pan.
  • Put the marinated paneer cubes one by one in the pan, leaving enough space in between to flip them easily. Sprinkle a bit of chaat masala powder over them and let them cook for a minute over a medium flame for about 2 to 3 minutes. Flip each piece carefully and let it cook for another minute or so on this side.
  • Flip the paneer cubes a couple of times until the moisture evaporates and it becomes dry.
  • Remove the paneer cubes from the pan and transfer them on a plate when the surface turns slightly brown in color.
  • Your tasty and healthy homemade paneer hariyali tikka is ready to enjoy. Serve them hot along with onion rings and lemon wedges with a little bit of chaat masala sprinkled on the top.

Notes

I used fresh mint and coriander leaves to get the best color and aroma of the hariyali masala.
The paneer should be soft and fresh so that it can easily absorb the green paste during marination.
Since paneer does not need to be left for a long time like meat, I recommend only a short marination time for it.
Using medium heat for cooking helps the paneer get a light brown color without becoming tough.
I have used a mix of butter and cooking oil to fry the marinated paneer cubes. You can use either of the two according to your liking.
