Ingredients

  • 500 grams Peach (deskinned and chopped roughly)
  • cup Sugar
  • 1 tsp Black salt
  • 1 tsp Red chili powder
  • 4 tbsp Vinegar
  • ½ tsp Food color
  • 1 cup Water

Instructions

  • Put 1 cup of water and 500 gm of chopped peach in a wok and let it cook on a medium flame for about 5 minutes to come to a boil.
  • At this point, add 1.5 cups of sugar and 1 tsp of black salt to it.
  • Then add 1 tsp of red chili powder and 2 tbsp of vinegar to the wok.
  • Stir the ingredients in the wok to mix everything nicely. Let it cook for 15 to 20 minutes.
  • When it comes to a boil, add ½ tsp of food color. Mix it nicely.
  • After some time, when the peach is soft and tender, use a masher to mash them partially.
  • Add this point, add 2 tbsp of vinegar more to it and mix it nicely. Notice the change in its color.
  • Cook it for a minute or two more. When it gets the desired consistency, transfer it into a bowl and your peach chutney is ready to be consumed.

Notes

I choose ripe, juicy peaches to ensure a naturally sweet and flavorful chutney.
Adjust the sugar quantity based on the sweetness of your peaches.
Adjust the amount of red chili powder according to your preference.
I explore different types of vinegar for varied depths of flavor such as apple cider vinegar or white wine vinegar.
Use food color sparingly for the natural color of peach in your chutney.
