Ingredients
  

  • 1 tbsp Garlic powder
  • 1 tbsp Onion powder
  • 1 tbsp Parsley
  • 1 tbsp Normal sugar
  • 1 tbsp Oregano
  • 1 tsp Citric acid
  • 1 tbsp Chili flakes
  • 1 tbsp Red chili powder
  • 1 tbsp Table salt
  • 1 tbsp Sweet paprika

Instructions
 

  • Take a mortar & pestle (haman dista).
  • Put 1 tbsp of garlic powder in it.
  • Then add 1 tbsp of onion powder.
  • Follow it with 1 tbsp of parsley.
  • Now add 1 tbsp of normal sugar.
  • Then add 1 tbsp of oregano.
  • Follow it with 1 tsp of citric acid.
  • Now add 1 tbsp of chili flakes.
  • Also add 1 tbsp of red chili powder.
  • Then add 1 tbsp of table salt.
  • Finally, add 1 tbsp of sweet paprika.
  • Now, grind and blend all the spices using the pestle.
  • You will need to mix the spices in the mortar and pestle for about 5 to 6 minutes until you see the color change to rich and vibrant yellow.
  • Finally, mix the spices with a spoon.
  • Transfer the mixture into a container and your peri peri masala powder is ready.

Notes

  1. Freshness of the ingredients is the key to achieve the authentic flavor and taste of peri peri masala powder. So, I recommend checking the expiry date before you buy the ingredients.
  2. Since my recipes are usually customizable, this is no different. You can adjust the ratio of spices according to your taste preference, especially the heat.
  3. Be very careful when you add citric acid to the mixture. Add just a little. This will prevent overwhelming the overall taste of the masala powder.
  4. I use a traditional mortar and pestle to blend the ingredients. This allows perfect distribution of flavor due to consistent grinding. It also helps in keeping a close eye on the texture and its color change.
