Notes
- Freshness of the ingredients is the key to achieve the authentic flavor and taste of peri peri masala powder. So, I recommend checking the expiry date before you buy the ingredients.
- Since my recipes are usually customizable, this is no different. You can adjust the ratio of spices according to your taste preference, especially the heat.
- Be very careful when you add citric acid to the mixture. Add just a little. This will prevent overwhelming the overall taste of the masala powder.
- I use a traditional mortar and pestle to blend the ingredients. This allows perfect distribution of flavor due to consistent grinding. It also helps in keeping a close eye on the texture and its color change.
