Ingredients
  

  • 6 tbsp Fennel seeds
  • 6 tbsp Coriander seeds
  • 1 tbsp Cumin seeds
  • 8 pieces Black cardamom
  • 1 tbsp Cloves
  • 5 pieces Star anise
  • 4 pieces Long pepper
  • 1 tbsp Cinnamon sticks small
  • 15 pieces Green cardamom
  • 8 pieces Bay leaves
  • 2 tbsp Table salt
  • 1 tbsp Red chili flakes (optional)
  • 1 tbsp Chicken powder (optional)
  • ½ tbsp Black pepper powder
  • 1 tsp Mace powder
  • 1 tsp Nutmeg powder
  • 1 tbsp White pepper powder

Instructions
 

  • Take a bowl and put 6 tbsp of fennel seeds in it.
  • Next, add 6 tbsp of coriander seeds to it.
  • Include 1 tbsp cumin seeds to the content.
  • Then add 8 pieces of black cardamom.
  • Now include 1 tbsp of cloves.
  • Add 5 small pieces of star anise.
  • Then add 4 pieces of long pepper to it.
  • Now include 1 tbsp of small cinnamon sticks.
  • Add 15 pieces of green cardamom.
  • Finally, add 8 pieces of bay leaves.
  • Now take a grinder.
  • Transfer all the spices in it.
  • Grind them nicely till you get a fine powder. Transfer it to the bowl. Now, to the ground spices add 2 tbsp of table salt.
  • You may also add 1 tbsp of red chili flakes if you want.
  • Similarly, you may also add 1 tbsp chicken powder to the mixture.
  • Now add ½ tbsp of black pepper powder.
  • Then add 1 tsp of mace powder.
  • Also include 1 tsp nutmeg powder.
  • And finally add 1 tbsp of white pepper powder.
  • Mix all the contents nicely.
  • Your pulao masala powder is finally ready to use.

Notes

  1. Using fresh and premium spices is the best approach to make pulao masala powder at home. It will make a real difference in taste and flavor.
  2. Roast each of the spices on a low flame. Slow roasting will bring out the best aroma of the natural oils in the spices.
  3. Cooling the roasted spices is essential for achieving the desired texture of the powder. It will also help in preserving the flavor of the mixture.
  4. You must grind the spices to perfection. So, take time and grind a couple of times to get a fine powder. I prefer grinding the spices in small batches while making a lot of it.
  5. If you intend to use the powder quite frequently, I would suggest storing it in small amounts in separate containers. This will prevent exposing the entire masala powder every time you need just a spoonful.
