Railway mutton curry is made with tender mutton pieces cooked in an onion-based gravy. Whole spices like cinnamon, cardamom, mace, nutmeg, and others are first fried nicely in mustard oil, and onions are added thereafter.
Fry 4 pieces of bay leaves (small, whole), 4 pieces of cinnamon sticks (1 inch in size each), 4 pieces of black cardamom (whole pods), 4 pieces of green cardamom (whole pods), a piece of mace flower, half a piece of nutmeg and 4 pieces of cloves in 2 tbsp of mustard oil. Then fry 4 pieces of large finely sliced onions until golden.
Add salt to taste and 500 grams of mutton (cut into small pieces). Cook for 10 minutes.
Add 2 tbsp of ginger, garlic, and green chili paste. Then add 10 pieces of curry leaves and 2 pieces of large potatoes, roughly diced. Also, add 1 tsp of turmeric powder, 3 tsp of Degi red chili powder, 3 tsp of coriander powder, and fry nicely.
Add 3 cups of lukewarm water and cook on a low flame for 30 to 40 minutes. Check the doneness. Cook more if needed. Finally, add 1 cup of coconut milk.
Mix a handful of finely chopped coriander leaves. Transfer it to a serving bowl.
