Railway mutton curry is made with tender mutton pieces cooked in an onion-based gravy. Whole spices like cinnamon, cardamom, mace, nutmeg and others are first fried nicely in mustard oil and onions are added thereafter. Curry leaves and diced potatoes along with powdered spices, are also added to the curry. Coconut is optionally added to tone down the heat of the spices.   • 3 tsp Degi red chili powder
  • 3 tsp coriander powder
  • 3 cups water (lukewarm)
  • 1 cup coconut milk (optional)
  • Coriander leaves (a handful, finely chopped)

I learned this recipe from a cookery show hosted by a chef on TV. I found it very easy to make and needed only a few ingredients. I noted down the ingredients and the steps carefully in my kitchen diary along with the expert tips.

I made the dish next Sunday at home and it turned out exceptionally well, both in taste and flavor. The mutton was cooked perfectly and my two sons were very happy and asked for more. My husband appreciated the unique twist of coconut milk added to it. Overall, my effort paid off and this dish now often features in our weekend menu. Thank you, chef!

How to Make Railway Mutton Curry? (Step by Step Guide with Images)

Step 1: Fry 4 pieces of bay leaves (small, whole), 4 pieces of cinnamon sticks (1 inch in size each), 4 pieces of black cardamom (whole pods), 4 pieces of green cardamom (whole pods), a piece of mace flower, half a piece of nutmeg and 4 pieces of cloves in 2 tbsp of mustard oil. Then fry 4 pieces of large, finely sliced onions until golden.

Step 2: Add salt to taste and 500 grams of mutton (cut into small pieces). Cook for 10 minutes.

Step 3: Add 2 tbsp of ginger, garlic, and green chili paste. Then add 10 pieces of curry leaves and 2 large pieces of potatoes, roughly diced. Also, add 1 tsp of turmeric powder, 3 tsp of Degi red chili powder, and 3 tsp of coriander powder and fry nicely.

Step 4: Add 3 cups of lukewarm water and cook on a low flame for 30 to 40 minutes. Check the doneness. Cook more if needed. Finally, add 1 cup of coconut milk.

Step 5: Mix a handful of finely chopped coriander leaves. Transfer it to a serving bowl.

Notes

The gravy of railway mutton curry uses a lot of onions. So, be generous with it.
Fry the mutton initially for about 10 to 12 minutes until it changes its color.
Adjust red chili powder according to your tolerance.
I always add lukewarm water. This helps maintain the temperature and ensures proper cooking of mutton.
Cook the mutton on a low flame after adding water.
