Rava fish fry comprises double-coated Indian Mackerel fish, shallow fried to a perfect golden and crispy exterior. First it is marinated with salt, lemon juice, and turmeric. After that, marinating with the paste of red chili, cumin, coriander, ginger, garlic, garam masala, and kokum water is a must. Lastly, the fish is covered with a mixture of spicy semolina and rice flour and shallow-fried.
Take 8 pieces of Indian Mackerel fish and make cuts on their body.
Marinate with ½ tsp of salt, ¼ tsp of turmeric powder, and 2 tsp of lemon juice (half a lemon) and keep aside for 10 minutes.
Make a thick paste with 3 tsp of red chili powder, 1 tsp of cumin seeds powder, 1 tsp of coriander seeds powder, ¼ tsp of turmeric powder, 1 tsp of garam masala powder, 1 tbsp of ginger garlic paste, ½ tsp of salt, and ¼ cup of dried kokum water.
Apply it nicely on the fish.
Mix ½ cup of fine semolina (sooji), ¼ cup of rice flour, ¼ tsp of salt, ½ tsp of red chili powder, ¼ tsp of cumin seeds powder, ¼ tsp of coriander seeds powder, and ¼ tsp of garam masala powder. Coat the fish pieces.
Shallow fry the fish pieces.

Marinating with salt, lemon juice and turmeric powder actually removes the strong smell of the fish.I have used kokum water. If you do not have it, use tamarind water. Add it gradually to make a thick paste.I have used fine sooji in the recipe. You can use any variant.Put the final crispy coating just before frying the fish to achieve the right texture.Fry the fish pieces on a medium to high flame, or else it will lose moisture and remove the coating.
