Sesame Fish

Sesame fish is made with whole Tilapia fish which is first rubbed nicely with salt, inside out. The sesame infused batter made with rice flour, corn flour, wheat flour, and baking powder makes the exterior crispy adding to the satisfying taste. It is then deep-fried in hot oil until perfectly cooked.

Ingredients
  

  • 650 grams Tilapia fish cleaned, with small cuts on both sides of the body
  • 2 tbsp rice flour
  • 2 tbsp wheat flour maida
  • 1 tbsp corn flour
  • ¼ tsp baking powder
  • ½ tbsp salt
  • 1 tbsp sesame seeds
  • 60 ml cold water
  • Cooking oil an adequate amount for deep frying

Instructions
 

  • Take 650 grams of Tilapia fish (cleaned, with deep cuts on both sides of the body). Rub ½ tbsp of salt on it nicely, both inside and outside.
  • Strain 2 tbsp of rice flour, 2 tbsp of wheat flour, 1 tbsp of corn flour, and ¼ tsp of baking powder. Add 1 tbsp of sesame seeds and mix.
  • Pour 60 ml of cold water and make a paste with a dropping consistency.
  • Coat the fish with the batter nicely including the cuts.
  • Heat an adequate amount of cooking oil. Check if it is hot enough with chopsticks.
  • Put the fish gently in the hot oil. Remove the batter droplets from the oil.
  • Flip after 6 or 7 minutes. Remove after 5 minutes on a rack to drip the excess oil.
  • Your tasty and crispy homemade sesame fish is ready.

Notes

I have taken Tilapia fish for the recipe. Pomfret or any other fish variety with fewer bones can also be used.
Checking the hotness of oil is crucial. Watch for the bubbles released from the chopsticks.
Though I have not, you can make a spicy batter by adding red chili and black pepper powder to it.
Do not flip the fish for the first 5 or 6 minutes. It will come out automatically after frying. Forcing will break the fish.
Leaving the batter droplets will burn them very fast affecting the taste.
