Sesame fish is made with whole Tilapia fish which is first rubbed nicely with salt, inside out. The sesame infused batter made with rice flour, corn flour, wheat flour, and baking powder makes the exterior crispy adding to the satisfying taste. It is then deep-fried in hot oil until perfectly cooked.
I have taken Tilapia fish for the recipe. Pomfret or any other fish variety with fewer bones can also be used.Checking the hotness of oil is crucial. Watch for the bubbles released from the chopsticks.Though I have not, you can make a spicy batter by adding red chili and black pepper powder to it.Do not flip the fish for the first 5 or 6 minutes. It will come out automatically after frying. Forcing will break the fish.Leaving the batter droplets will burn them very fast affecting the taste.
