Tawa pulao comprises fresh vegetables like capsicum, tomatoes, carrots, and potatoes, as well as onions and potatoes cooked with boiled rice. A combination of whole and powdered spices, along with a few freshly chopped coriander leaves and lemon juice added at the end of the cooking process, enhances its taste further.
Heat 4 tbsp of cooking oil in a pan over a medium flame and put in 1 tsp of cumin seeds and 1 piece of bay leaf. After the cumin seeds stop crackling add finely chopped pieces of ¼ cup of onions and carrots first. Fry for a minute. Then add finely chopped pieces of a cup of tomato, ¼ cup of capsicum and ¼ cup of green peas. Cook for 2 to 3 minutes.
Now, add ½ cup of boiled potato (peeled and diced roughly). Mix and add 1 tsp of pav bhaji masala, 1 tsp of red chili powder, and salt to taste. Mix them, cover the pan and cook for a minute.
Add 2 cups of boiled rice and mix nicely. Cover and cook on a low flame for about 2 minutes.
Finally, add a few finely chopped coriander leaves and 1 tbsp of lemon juice to it. Mix nicely. Check the doneness and switch off the gas stove. Transfer it to a plate.
Your tasty and spicy homemade tawa pulao is ready to enjoy. Serve it with onion rings and lemon wedges.
I have not used green chilies in the recipe as I have included red chili powder in it. Otherwise, the pulao will be too spicy and hot.You can use any variety of rice in the dish, though I have used Basmati rice. You can even use leftover rice to make tawa pulao. Do not cook the rice after adding the lemon juice, or else, it will spoil the taste.
