Ingredients

  • 250 grams White sesame seeds
  • 350 grams Jaggery
  • ½ tablespoon Ghee

Instructions

  • Dry roast the sesame seeds in a hot pan. Once they are done, pour them into a bowl.
  • Then add half a cup of water in the hot pan.
  • Add jaggery and let it melt.
  • Check consistency of melted jaggery. Drop a small quantity of melted jaggery in the water, if it becomes solid and hard, it means melted jaggery is ready to make laddu. Turn off the gas stove.
  • Brush ghee on a flat plate and keep it aside.
  • Add dry roasted sesame seeds in the melted jaggery.
  • Gradually mix the dry roasted sesame seeds with melted jaggery.
  • Pour the mixture on the flat plate already greased with ghee.
  • Shape the mixture into round laddus using both hands. Apply little in ghee in both hands to prevent from sticking. Allow laddus to become cool before serving. Enjoy them as standalone sweet or serve them with a hot cup of masala chai, a glass of hot or cold milk.

Notes

Dry roasting the sesame seeds is a crucial step. Make sure the flame is low and you stir them continuously until they turn golden brown. This will prevent them from burning and becoming bitter. It will add to the rich flavor and nuttiness.
Always use fresh ingredients to make til ke laddu. Fresh sesame seeds, ghee, and molten jaggery will augment the overall taste, flavor, and texture of the sweet dish.
Melt the jaggery to a smooth liquid without any lumps so that sweetness spreads evenly in across all laddus.
Use the ghee for shaping the laddus judiciously. Do not add to much of it so that it overpowers the natural taste and flavor of the sesame seeds. Typically, the ghee is used to help in binding the mixture and not to make it greasy.
Do not press the mixture too hard with your hands while shaping the laddus. I gently roll them between palms in a circular motion to form small balls and prevent them from falling apart.
