Take 1 cup of refined wheat flour (maida).
To it, add ½ tsp of salt, 1 tbsp of coriander leaves (finely chopped), 1 tbsp of cooking oil, 1 tbsp of semolina (suji), and 1 tbsp of gram flour.
Mix these ingredients nicely.
Now, add 1 tbsp of cooking oil again.
Mix the oil nicely with the dry refined flour and other ingredients and then add 110 ml of water to it.
Knead nicely to make a soft dough. Cover and keep it aside for 10 minutes to set properly.
In the meantime, make the paneer vegetable stuffing for the paratha. In a flat bowl and take 1 potato (medium size, boiled, mashed), ¼ cup of paneer (fresh, mashed or grated), 1 tbsp of green capsicum (chopped finely), 1 tbsp of carrot (chopped finely), 1 tbsp of onion (chopped finely), 2 pieces of green chilies (chopped finely), 1 tbsp of coriander leaves (chopped finely), ½ tsp of salt, ½ tsp of red chili powder, ½ tsp of coriander powder, and ½ tsp of cumin powder.
Mix everything nicely.
Now, take some dough. Roll it in a round shape.
Put a little bit of stuffing and spread it nicely.
Fold it from all sides to give a square shape.
Sprinkle a bit of refined wheat flour on it.
Roll it again, this time in a relatively square shape.
Heat a frying pan or tawa. Do not put any oil at this point of time. Put the paratha on it. Let it cook on medium heat from one side nicely.
Flip it when it is cooked nicely.
Let it cook nicely from the other side.
Now, sprinkle 1 tbsp of cooking oil on the paratha. Spread it with the spatula.
Flip the paratha a couple of times and press the ends with the spatula continuously to allow it to fry from both sides well and cook nicely inside out.
Your homemade, delicious vegetable paneer paratha is finally ready. Serve it hot as it is or with tomato ketchup or a chutney of your choice.
