Vegetable paneer paratha is made with fresh paneer and vegetable stuffing and a few powdered spices and fried nicely from both sides. The dough is usually prepared with semolina, gram flour and chopped coriander leaves for taste enhancement. The Ingredients:

For making the vegetable paneer paratha dough:

  • 1 cup refined wheat flour (maida)
  • ½ tsp salt

  • ¼ cup paneer (fresh, mashed or grated)
  • 1 tbsp green capsicum (chopped finely)
  • 1 tbsp carrot (chopped finely)
  • 1 tbsp onion (chopped finely)
  • 2 pieces green chilies (chopped finely)
  • 1 tbsp coriander leaves (chopped finely)
  • ½ tsp salt
  • ½ tsp red chili powder
  • ½ tsp coriander powder
  • ½ tsp cumin powder

For frying the vegetable paneer paratha:

  • 1 tbsp cooking oil

This paratha recipe came from one of my distant relatives who visited our home during a family emergency. Amid all the tension, she offered to take over the kitchen for one meal and made these delicious parathas for all of us for breakfast. The comfort it brought surprised us all.

I asked for the method and she scribbled it on tissue. I recreated it during a tired weekday later on. My husband said it had strength, and the boys felt comforted. Now, it is our crisis-calm dish. That day reminded me that in moments of worry, some people do not speak much but they just serve peace on plates and leave a recipe that stays long after.

How to Make Vegetable Paneer Paratha? (Step by Step Guide with Images)

Step 1: Take 1 cup of refined wheat flour (maida).

Step 2: To it, add ½ tsp of salt, 1 tbsp of coriander leaves (finely chopped), 1 tbsp of cooking oil, 1 tbsp of semolina (suji), and 1 tbsp of gram flour.

Step 3: Mix these ingredients nicely.

Step 4: Now, add 1 tbsp of cooking oil again.

Step 5: Mix the oil nicely with the dry refined flour and other ingredients and then add 110 ml of water to it.

Step 6: Knead nicely to make a soft dough. Cover and keep it aside for 10 minutes to set properly.

Step 7: In the meantime, make the paneer vegetable stuffing for the paratha. In a flat bowl and take 1 potato (medium size, boiled, mashed), ¼ cup of paneer (fresh, mashed or grated), 1 tbsp of green capsicum (chopped finely), 1 tbsp of carrot (chopped finely), 1 tbsp of onion (chopped finely), 2 pieces of green chilies (chopped finely), 1 tbsp of coriander leaves (chopped finely), ½ tsp of salt, ½ tsp of red chili powder, ½ tsp of coriander powder, and ½ tsp of cumin powder.

Step 8: Mix everything nicely.

Step 9: Now, take some dough. Roll it in a round shape.

Step 14: Heat a frying pan or tawa. Do not put any oil at this point of time. Put the paratha on it. Let it cook on medium heat from one side nicely.

Notes

Use fresh paneer and vegetables to make these parathas. It will render a fresh and beautiful taste.
I let the dough sit for at least 10 minutes to set properly. It also gives me enough time to prepare the vegetable stuffing nicely.  
I have given square shape to my parathas because it is easier to roll that way with the stuffing inside. If you want, you can make circular parathas as well.
While frying the paratha, ensure that the flame is medium to low. This will ensure even cooking from the inside without burning the outside.
Do not rush the frying process of the parathas, or else the stuffing will be uncooked and render a raw and unpleasant taste.
