Prawn balls are made with fresh prawns, white pepper, sugar, and coated with cornstarch and breadcrumbs before frying them perfectly. The process to make prawn balls at home is quite simple as you will find in my recipe.

The Ingredients:

This one was from a friend’s birthday party in a flat in Kolkata. Amidst all the chips and cold drinks, suddenly a grandmother placed a slightly warm plate covered in aluminum on the table. The atmosphere came to a standstill – everyone’s conversation stopped right there. That dish was something that would grab everyone’s attention.

When I asked, she wrote the recipe for me. Even today I have kept that paper written in shaky handwriting safely with me. I failed the first few times. I mastered it over time and now, I make it for potlucks and parties at home. It always disappears first. I like to imagine that her hands are guiding mine across time and cities.

How to Make Prawn Balls? (Step by Step Guide with Images)

Step 1: Take 10 to 12 pieces of prawns in a bowl. Add a little bit of water.

Step 2: Put ½ tsp of regular table salt to it. Mix nicely and keep it aside for 5 minutes.

Step 3: Now, drain the water. Lay the prawns on a piece of tissue paper to dry.

Step 4: Cut off the tails. Keep them aside on a plate.

Step 5: Chop the flesh into smaller pieces.

Step 6: Put them in a grinder. Blend them.

Step 7: Transfer the paste to a bowl. Add ½ tsp of salt, ½ tsp of sugar, and ¼ tsp of white pepper powder.

Step 8: Mix nicely until well combined. Keep it aside for 5 minutes to set.

Step 9: Take 2/3 cup of bread crumbs in a bowl.

Step 10: Take 2/3 cup of cornstarch or flour in another bowl.

Step 11: Crack 1 egg in another. Whisk it.

Step 12: Now, scoop out a spoonful of prawn paste. Put it in your hand and flatten it.

Step 13: Put 1 tail. Wrap the prawn paste around it to make a ball.

Step 17: Keep it aside on a plate. Repeat steps 12 to 16 to make all the balls.

Step 18: Heat an adequate amount of cooking oil in a kadai or a deep-frying pan on a high flame. Reduce the flame when hot. Put each prawn ball in it carefully.

Step 19: Flip and fry them until golden brown. Remove them. Put them on absorbent paper to soak the excess oil.

Step 20: Chop a handful of fresh lettuce finely. Spread them evenly on a plate.

Notes

Use fresh prawns to make prawn balls at home. I usually wash and pat dry them. This helps in binding and enhances the crispiness.
I retain the tail for a better presentation. You may remove it if you want.
Make a fine paste of the prawns. This will enhance the texture of the balls.
Let the seasoned prawn paste rest for a while for taste enhancement.
Coat the balls evenly with bread crumbs and cornstarch. This will render the desired crispiness.
