Among the different varieties of Indian flatbreads, ajwain paratha stands quite distinct and is very popular. It is mainly made using whole wheat flour, or atta, to which crushed ajwain is added to enhance the taste and flavor, along with salt and cooking oil. The triangular-shaped paratha is cooked on a preheated iron tawa. Before taking out the paratha, it is greased with either cooking oil or butter. I learned about this recipe during a casual visit to my parents’ house. My mother mentioned it while talking about old cooking habits. Though she did not narrate the recipe to me in detail, she told me the basic ingredients and the tactic to fry them so that parathas turn out soft and nice. I did not ask for the details either, as she was busy with other chores.

When I came back home, I tried it once on a weekday. I wasn’t confident while making it. Still, the taste came out decent. My husband said it reminded him of something familiar. My sons ate without comments. I noted it down later in my notebook.

How to Make Ajwain Paratha? (Step by Step Guide with Images)

Step 1: Take 2 cups of wheat flour (atta) in a mixing bowl and add 1 tsp of salt to it. Crush 1 tsp of ajwain in your hand gently and add to the flour. Follow it with 1 tsp of cooking oil. Mix everything nicely. Add 1 cup of water gradually and make a soft dough.

Step 2: Make a peda from the dough. Roll it to a round shape.

Step 3: Put a little bit of cooking oil on it. Grease it, sprinkle some dry atta on it and fold it in half.

Step 4: Put some oil again on the folded surface. Grease it, sprinkle some atta and fold it in the middle again to give it a triangular shape. Roll it to make a triangular paratha.

Step 5: Put the paratha on a preheated iron tawa. Let it cook for a minute. Flip it to cook the other side.

Step 6: Grease the surface with cooking oil and put some on the tawa. Flip it a couple of times and press the sides with a spoon to cook it nicely. Remove it when done. Repeat the process to make all the parathas and keep them all on a plate.

Step 7: Your soft and tasty homemade ajwain paratha is ready to serve. Top it with a piece of butter cube and enjoy with achaar or dry sabji.

Notes

I add a bit of cooking oil while making the dough. This makes my parathas soft.
Use any type of cooking oil to make the dough.
Always crush ajwain before adding to the dough mixture. This enhances its flavor significantly.
Do not pour the entire cup of water at once to make the dough for best results.
I have also used cooking oil for frying the paratha. You can however use butter for a richer taste and flavor.
