Chicken balls are a combination of chicken, eggs, bread, ginger-garlic paste, onion and a wide variety of ingredients and spices. These balls are boiled first and then fried to golden brown. The steps to make chicken balls at home are pretty simple, as you will find in my recipe.

I discovered this recipe at a beach shack in Goa while watching the sun dip below the horizon. An old man was cooking it on an equally old charcoal chulha. Everything looked simple and ordinary, but the smell of the food was phenomenal—bold, fragrant, with a smoky twist I couldn’t imagine. We had a long conversation – time seemed to have stopped, so to speak.

He said just one thing that touched my heart: “Every taste begins with the right ingredients and the right feeling.” The first time I made it at home on gas stove, it turned out better than I had expected. Now whenever I make it, the soft evening sun, the silence of the sea and that one moment of his always come back to mind.

How to Make Chicken Balls? (Step by Step Guide with Images)

Step 1: Take 5 slices of white bread. Remove their edges. Cut them into four parts. Cutting bread slices

Step 2: Take 250 gm of chicken (preferably chicken breast) and slice it into small pieces. Take a mixer grinder and put the chicken pieces in it.

Step 3: Add the bread pieces. Break one egg in it.

Step 4: Now, add 1 tsp of garlic paste and ½ tsp of ginger paste to it.

Step 5: Follow it with 1/3 tsp of black pepper powder, 3 tbsp of finely chopped onions, and 3 pieces of fresh green chilies, broken into half.

Step 6: Then add 2 tbsp of finely chopped fresh coriander leaves, 1/3 tbsp of regular table salt, ½ tsp of red chili flakes, 1 tbsp of dark soya sauce, and 1 tbsp of tomato sauce to it.

Step 7: Blend it to a fine paste. Transfer it to a bowl.

Step 8: Heat an adequate amount of water in a frying pan. Take a fistful of chicken paste in your hand. Use a spoon to cut small balls while pressing the paste. Release them in water.

(Pro tip: Wear a plastic glove while performing this step. This will ensure the smooth flow of the chicken paste out of your fist).

Step 9: Let the chicken balls boil for 10 minutes. Remove them.

Step 10: Put them on a strainer and wait till they are cool. Now, press them a bit so that the excess water drains off.

Step 11: Now, take another frying pan and heat 1 tbsp of refined oil in it. Put the chicken balls in it.

Step 12: Fry the balls for about 10 minutes on a very low flame until they turn light brown in color. Remove them.

Notes

I use lean chicken breast for a healthier and softer texture of the chicken balls.
I prefer removing the edges of bread slices for a smoother mixture.
Use a good mixer grinder to blend the chicken and bread evenly.
Do not skip the egg. The egg helps hold the chicken balls together.
Blend everything well for a uniform and soft texture.
