Egg French fries refer to potato slices coated with egg and other spices before frying. The steps are very easy to make egg French fries at home. If you do not know them, continue reading my simple recipe.

“This is our specialty,” said the hostess of a homestay in Darjeeling. I was not much impressed looking at the French fries, or so as I thought at the first sight of this dish. I did not expect much from it either. However, as I took the first bite, I was amazed. “This I no ordinary French fry.

I must have this recipe,” I said to myself. I went to the kitchen, asked for the recipe from the hostess, and she happily obliged. Actually, I am to her as this is always a favorite when I make it for a party at home.

How to Make Egg French Fries? (Step by Step Guide with Images)

Step 1: Take three large potatoes, wash them, peel them, and cut them into long fingers. Put them on a piece of tissue paper to absorb the excess water and starch. Gently rub the pieces further with tissue paper ensuring that you do not break them in the process. Then put them on a plate.

(Pro tip: Using a piece of tissue paper to absorb the excess water and starch is a good practice. It will ensure that the fries are crisp. It will also ensure that the hot oil does not sprinkle when you put the potato slices in it).

Step 2: Now, break an egg on top of the potato slices. You can use more eggs if you want. Add ½ tsp of regular table salt to it.

Step 3: Then add a couple of ground spices to it such as 1 tsp of red chili flakes and 1 tsp of turmeric powder.

(Pro tip: I recommend using red chili flakes instead of dry red chili powder because it enhances the taste of the egg French fries even further. However, adjust the amount of chili flakes according to your taste preference).

Step 4: Follow it with ½ tsp of cumin seeds powder and ½ tsp of coriander seeds powder. Mix them nicely and keep the plate aside for a while for everything to blend nicely and marinate properly.

Step 5: Now, take a strainer, put ¼ cup of refined wheat flour (maida) in it, and shake it gently to sprinkle the flour on the potato slices nicely.

Step 6: Now, use your hands to mix the maida with the potato slices. Ensure that each slice of potato is coated nicely with the spices and the refined wheat flour. Again, keep the plate aside to allow them to set properly.

Step 7: In the meantime, take an adequate amount of cooking oil in a frying pan or kadai and heat it on a high flame. Turn the flame to medium when the oil is very hot. Now, put the potato slices gently in the oil one by one from one side ensuring that there is enough distance between the two slices. Be very careful so that you do not splash hot oil.

Step 8: Fry the egg balls for about 4 to 5 minutes. Flip them occasionally using a spoon. Fry all the potato slices in the same way.

I always use fresh potatoes to make egg French fries at home.
Cut them in long fingers, wash them, and pat them dry.
Let the potato slices marinate with the eggs and spices for a bit.
I have used refined wheat flour (maida) for coating, but you can coat the potato fingers with any other type of flour of your choice.
Ensure an even coating of the flour on the potato slices for crispy exterior.
