The Ingredients:

To make the stuffing:

  • 1 cup refined wheat flour (maida)
  • 1 tsp cooking oil
  • Table salt – To taste
  • Water – As required

I was used to chicken and veg momos that are usually available at the roadside stalls in Kolkata. While exploring Puducheryy, Tamil Nadu, I came across this dish in a café run by a few students. The name, written by chalk on a blackboard, attracted me due to the strange name. I thought it will be different. When it was served, I took a look at it.

It was simple yet rustic in appearance. I asked the cook there about the recipe, who simply said, “Just intuition,” and walked off smiling. I felt teased and inspired both by the answer. I tried it at home, trusting my own guesses. Sometimes it failed, sometimes it was great. Slowly I got it right. Now, whenever I make it, it is a hit.

How to Make Egg Momos? (Step by Step Guide with Images)

Step 1: Take 1 cup of refined wheat flour (maida) in a bowl. Put 1 tbsp of cooking oil and salt to taste in it. Mix them nicely, add water gradually as required, and make a soft dough. Cover it and keep it aside for half an hour to set.

(Pro tip: You can brush the dough with a little bit of oil to retain its tenderness).

Step 2: Now, take a plate and grate or finely chop 1 small piece of onion, 2 fresh green chilies, 1 tsp of garlic, and 1 tsp of ginger.

Step 3: Also, grate 1 large piece of potato.

Step 4: To make the stuffing, take 1 tbsp of cooking oil in a hot frying pan and add the grated onion and fresh green chilies. Fry them for a minute or so.

Step 5: Now, add the grated potato. Mix it and cook it nicely on a medium flame for a couple of minutes.

Step 6: Then, add the grated ginger and garlic and mix them as well.

Step 7: Add salt to taste. Mix it.

Step 9: Mix it and cook it for another couple of minutes on a low flame. When done, transfer the stuffing onto a plate.

Step 10: Take the dough. Take a piece of it. Take a rolling surface and pin and roll it to make a large circular chapati.

Step 11: Use a stainless-steel glass to cut small circular pieces from it.

(Pro tip: You can make even smaller balls and roll them to make these smaller pieces individually. However, ensure that they are not very thick).

Step 12: Now, take each circular piece. Place a little bit of the filling in its center.

Step 13: Apply a little bit of water on the edge with your finger.

Step 15: Repeat the same process to make all the momos. Keep them on a plate and keep them aside for about 5 minutes to set properly.

Step 16: Now, take a steamer. Grease it with a little bit of oil. Arrange the momos in it. Steam it for about 20 to 30 minutes.

Step 17: When done, take them out. Your homemade egg momos are now ready to serve. Lay them on a plate. Sprinkle a little bit of tomato ketchup on them for garnishing and serve them hot.

Notes

I recommend making a soft dough by adding water slowly and mixing well. Add a little oil to keep it smooth.
Cut or grate onions, garlic, and ginger into tiny pieces so that the stuffing mixes evenly.
Cover the dough and leave it for 30 minutes. This makes it softer and easier to roll.
Apply a little oil to the dough before shaping the momos to keep them soft.
Roll the edges of the momo wrapper thin so that every bite is light and delicious.
