Egg​‍​‌‍​‍‌​‍​‌‍​‍‌ tikka is a tasty and healthy protein source snack made by mixing eggs with veggies, spices, and a tasty yogurt-based masala, frying them and cutting them into cubes. Later, these pieces are coated with gram flour and curd mixed with spices along with capsicum and onions, which are then skewered and finally fried till crispy and slightly charred. The Ingredients:

To make the egg cubes:

  • 4 pieces eggs

To make the masala paste:

  • ½ cup curd
  • 2 tbsp besan
  • 1 tbsp red chili powder
  • 1 tsp coriander powder
  • ½ tsp garam masala powder
  • ¼ tsp cumin powder
  • ¼ tsp black salt
  • Salt as per taste
  • ¼ tsp black pepper powder
  • ½ tsp ginger garlic paste
  • 2 tbsp cooking oil
  • 1 tbsp coriander leaves

To add to the egg cubes in the skewer:

  • ½ cup capsicum (diced in squares)
  • ½ cup onion (diced in squares)

To fry the egg tikkas:

  • ¼ tsp butter (or ghee)

I learned about this egg tikka recipe at my sister-in-law’s during a relaxed talk in her kitchen. Since she enjoys trying out fast bites, she went for eggs rather than the typical paneer or chicken. This caught my interest right away – so I watched carefully, keeping track of every move plus what went into it. I jotted everything down on my phone, wondering how good it might actually work when I tried it myself.

I tried to recreate it in my kitchen that same weekend. The egg tikka came out perfect – crunchy outside but tender within. My husband liked it so much he took another round, while my boys munched theirs down with chutney. Watching them dig in filled me with real appreciation for finding a simple, tasty dish we all loved eating side by side.

How to Make Egg Tikka? (Step by Step Guide with Images)

Step 1: In a mixing bowl take ½ cup of finely chopped onion along with finely chopped pieces of 2 pieces of green chilies, 1/3 cup of carrot, ¼ cup of capsicum, ¼ cup of fresh coriander leaves, ½ tsp of ginger garlic paste, 1 tsp of red chili powder, ½ tsp of coriander powder, ½ tsp of garam masala powder, ¼ tsp of black pepper powder, salt to taste, and ½ tsp of red chili flakes and mix all of them very nicely.

Step 2: Now, crack 4 pieces of eggs in it and mix nicely. Keep it aside.

Step 3: Now, heat 1 tbsp of butter in a pan on a medium to low flame and pour the egg mixture in it. Cover and cook it on both sides for about 7 to 8 minutes, flipping in between.

Step 4: Remove it when done. Cut it into cubes. Keep them aside.

Step 5: Now, in another mixing bowl, take ½ cup of curd, 2 tbsp of besan, 1 tbsp of red chili powder, 1 tsp of coriander powder, ½ tsp of garam masala powder, ¼ tsp of cumin powder, ¼ tsp of black salt, salt as per taste, ¼ tsp of black pepper powder, ½ tsp of ginger garlic paste, and 2 tbsp of cooking oil and mix them nicely. Then, add 1 tbsp of coriander leaves and mix well.

Step 6: Now, to the masala mix, add square pieces of ½ cup of capsicum and ½ cup of onion as well as the fried egg cubes. Coat them all very nicely.

Step 7: Arrange these coated capsicum, onions, and egg cubes on a skewer. Keep them all aside.

Step 8: Now, heat ¼ tsp of butter in a pan over a low to medium flame and brush it to spread it all over the surface of the pan.

Step 9: Put the skewers on it and fry them nicely, turning them continuously. Remove when done.

Notes

I would always suggest you go with a low or medium heat when frying the egg. This keeps cooking steady from inside and out. That way, no part gets left behind.
You can try ghee or clarified butter rather than regular butter to cook the egg tikka.
Even if I’ve never tried it, tossing in some chopped tomatoes when you cook the egg tikka could work just fine.
