Notes

  • Selecting top-quality whole spices and dry-roasting them to perfection on a low flame is the key to make fried rice masala powder at home.
  • Keep a close eye on the change in color of the spices while roasting. Ensure that the spices are not burnt but turn brown evenly. Stir them continuously.
  • I would strongly recommend cooling the roasted whole spices before grinding as well as the ground powder before transferring it into a jar for storage.
  • I prefer a well-blended powder and grind the spices thoroughly. However, if you prefer a coarse texture, you are welcome.
  • Whenever you use the masala powder, ensure scooping the necessary amount with a dry spoon. This will prevent contamination due to moisture introduction.
