Lauki soup is a healthy dish comprising bottle gourd or lauki as its base. This is boiled along with garlic cloves, onions and fresh coriander stems. After this, it is salted and peppered to taste, mixed with water and slow-cooked to allow the flavors to blend. To make the soup delicious and fresh a little green onion is added and the soup is served with a simple mix of chopped spring onions and black pepper. The Ingredients:

To boil lauki:

This recipe came from a grocery store conversation. Another woman was checking the quality of the bottle gourd and we spoke briefly about prices and cooking. She mentioned this dish as something she makes when she doesn’t want to cook elaborate food. I remembered it because she said it very casually and minutely.

I tried it a few days later without much planning. I didn’t follow any strict steps but followed the tips I added in my recipe. The soup was flavorful and light. My husband said it tasted simple and filling and my sons finished quickly and moved on. I felt it fit easily into our routine. I was grateful to the lady for sharing this wonderful recipe with me that gave me these precious moments and feelings.

How to Make Lauki Soup? (Step by Step Guide with Images)

Step 1: Take 2 cups of bottle gourd (skin removed, cut into small pieces), 1 piece of onion (medium size, sliced finely), 4 garlic cloves (peeled, whole), a few coriander stems, and 2 cups of water in a pressure cooker. Cover the lid and cook up to 3 whistles.

Step 2: Remove them carefully without the water to a mixie jar and make a fine paste.

Step 3: Heat a skillet and pour the paste. Also, add ½ tsp each of salt and black pepper powder along with ½ cup of water. Mix well and cook for 5 minutes over a medium flame. Finally, add 1 tbsp of finely chopped pieces of only the green part of spring onions to it. Mix well.

Step 4: The soup is ready. Transfer it to a soup bowl. Garnish it with a little bit of finely chopped spring onions and crushed black pepper as required and enjoy.

Notes

I have used the green part of spring onions only. This adds to the flavor without the pungent smell of onions.
Cook the soup over a medium flame. This will prevent overcooking and burning to spoil the nutritional value and the natural flavor of the soup.
Add crushed black pepper according to your taste preference.
