Vegetable paneer grilled sandwich is made from different types of vegetables cooked with oregano, black pepper and others in butter, mixed with mayonnaise and stuffed between bread slices along with cheese and paneer before grilling them. It is quite quick and easy to make a vegetable paneer grilled sandwich at home, as you will find out in my recipe.

This sandwich recipe came from a teacher I met at my elder son’s school during a parent-teacher meeting. Later on, while chatting with her we talked about how difficult it is to make different types of items for breakfast for school kids, she came up with this suggestion. When I asked for the recipe, she quickly wrote down the recipe on the back of the timetable sheet.

I tried to make it on a weekday evening and it turned out to be marvelous. My husband found it relaxing, and my sons said it felt “like homework food.” Now, it is our midweek calm dish. That chat reminded me that teachers not only guide our kids but often carry quiet culinary wisdom that helps them wind down after shaping little lives every day.

How to Make Vegetable Paneer Grilled Sandwich? (Step by Step Guide with Images)

Step 1: Take 1 piece of onion (medium size), 1 piece of green capsicum (large size), 1 piece of yellow capsicum (medium size), and 1 piece of red capsicum (medium size) on a chopping board. Chop them all finely and keep them aside on a plate.

(Pro tip: You can use different vegetables of your choice as well such as finely chopped carrots, cabbage, and others. Remove the seeds and white portion of the capsicum along with it while cutting).

Step 2: Now, heat a frying pan on medium flame and melt half a cube of butter and remove the other half to use later.

(Pro tip: If you do not have butter due to health reasons, you can use white oil to fry the vegetables. However, butter or ghee enhances the taste and flavor of the vegetable stuffing).

Step 3: Put the chopped vegetables in the hot butter.

Step 4: Stir the vegetables continuously to cook them nicely on a high flame for more than a minute to remove the raw smell and moisture from them. Fry until they change color and become dry. When it does, add ½ tsp of salt, ½ tsp of chili flakes, ½ tsp of oregano, and ¼ tsp of black pepper (crushed) to it. Mix them nicely and cook for a minute or so.

Step 5: Switch off the flame of your gas stove and transfer the cooked vegetables to a separate bowl to cool down a bit.

(Pro tip: Cooling the cooked vegetables is crucial as heat may cause the mayonnaise added to melt and impact the consistency of the vegetable stuffing).

Step 6: Now, add 3 tbsp of mayonnaise.

(Pro tip: Do not put too much mayonnaise even if you like it a lot as it will make the stuffing moist which will come out while grilling. Use hung curd if you do not have mayonnaise).

Step 7: Mix it nicely with the vegetables to make a thick and dry stuffing as shown in the image below.

Step 8: Take 8 slices of bread. Apply butter on one side of all four bread slices and keep them face up as shown in the image.

(Pro tip: You can take regular or sandwich bread. It does not matter whether it is white bread or brown bread. You must use butter at room temperature to apply on the bread slices. Never use frozen butter directly as it will not spread evenly on the bread slices).

Step 9: Now, put 2 pieces of lettuce leaves on only two of the bread slices as shown in the image below.

Step 10: Then, gently and carefully spread the vegetable stuffing to cover the lettuce leaves entirely.

(Pro tip: If you want you can use a single slice of paneer. You may even grill the paneer slightly before putting it on the bread slices).

Step 12: Now, cover each bread piece with a slice of cheese.

Step 13: Put the other slice of bread on top of the cheese slice. Apply butter on the outer surface of this bread slice as shown in the image below.

Step 14: Now, heat a sandwich grill and grease it with a little bit of butter.

Step 15: Place the sandwiches on it and apply butter on the top surface of the bread slices as shown in the image below. Let it cook slowly for a minute or so on a medium flame.

Step 16: Flip the sandwiches carefully one by one when one side of them is done.

Notes

I always use fresh bread, paneer and colorful veggies to make this sandwich at home. It gives the best color and texture.
You may apply a generous amount of green chutney along with butter on the bread slices. This will give a unique twist to the taste.
You may grill the sandwich in a regular or an electric grill. If you do not have it at home, use a regular tawa to toast the bread for a crispy and crunchy sandwich.
Reduce the amount of chili flakes if you are making them for kids.
Though I have used lettuce leaves in the sandwich, it is not mandatory. You can skip it altogether.
