The Ingredients:

For making the stuffing:

  • 75 gm Mozzarella cheese or ¾ cup

For making the batter:

  • ½ cup refined wheat flour (maida)
  • ½ cup corn starch
  • Salt – To taste
  • Water – As required

For coating the cheese balls:

  • 6 slices bread (to make bread crumbs)

For deep frying the cheese balls:

  • Refined oil – An adequate amount

I found this recipe in an old cookbook at my aunt’s place in Durgapur. The ingredients are easy to find and the balls were incredibly filling and pure. Something about the taste lingered, like it belonged to a slower world. I was a little nervous when I tried to recreate it at home, but it was important to taste that peace again.

The first few times it felt wrong—everything was too noisy and rushed. But I eventually found a rhythm. Now I only make it when I need to slow down and there is no distraction. Just me and the sound of my breath while the dish comes to life slowly.

How to Make Cheese Balls? (Step by Step Guide with Images)

Step 1: Grate 4 pieces of boiled potatoes of medium size along with 2 garlic cloves and 2 cubes of processed cheese in a bowl.

Step 2: Add 2 tbsp each of very finely chopped pieces of red capsicum, green capsicum, onion, and frozen sweet corn to it. Also, add regular table salt to taste.

Step 3: Follow it with some ground spices such as 1 tsp of oregano seasoning, ½ tsp of red chili flakes, and ½ tsp of black pepper powder.

Step 4: Finally, add ¾ cup of frozen diced mozzarella cheese or 75 to 80 gm of its regular variety.

Step 5: Mix them all nicely. Do not mash.

Step 6: Take a little bit of the cheese dough and roll it in your hand to make a small ball.

Step 7: Repeat the process to make all the balls. Keep them aside on a plate for 5 minutes to set properly.

Step 8: Now, take ½ cup of refined wheat flour (maida) and corn starch, salt to taste, and water as required in a bowl and make a smooth and runny batter.

Step 9: Then, take a mixer grinder, tear, and put 6 slices of white bread in it.

Step 10: Grind it to make bread crumbs. Dry roast them. Put them in a bowl.

Notes

I use pizza oregano or seasoning powder for better flavor. Avoid plain oregano powder.
I wet my hands slightly to prevent the cheese mixture from sticking while shaping.
Keep the batter thick enough to prevent leaks but not too thick to make it chewy.
Make all cheese balls the same size for uniform frying and consistent texture.
Fry one cheese ball first to check batter consistency before cooking the whole batch.
