I didn’t really plan to learn this recipe. It just happened one day when I had dropped by my neighbor’s place. She was making Chicken Rogan Josh, the way she always did — no measurements, no recipe book, just her own sense of smell and color. I stood there watching without making it obvious, trying to follow what she was tossing into the pot.

When I tried it at home later that week, the house filled up with that same warm smell. My husband kept asking, “Ho gaya?” even though he could see it was still simmering, and the boys were already waiting with their plates. Watching them eat quietly for the first few minutes — that made me smile. Funny how something I learned in such a casual moment ended up becoming a regular dish in our kitchen. That small pause felt like a win. Funny how a recipe you learn casually ends up becoming part of your usual cooking.

How to Make Chicken Rogan Josh? (Step by Step Guide with Images)

Step 1: To marinate the chicken, take medium sized pieces of 500 grams of chicken (with bone) in a bowl. Mix them with salt to taste, ½ tsp of black pepper powder, ½ tsp of garam masala powder, ¼ tsp of red chili powder, and 1 tbsp of lemon juice. Keep it aside for half an hour.

Step 2: Now, dry roast 1 tsp fennel seeds in a kadai for about 1 minute. Remove it from the flame. Let it cool and transfer it in a mixer to grind it into a smooth powder.

Step 3: Now, add 1 piece of ginger (1-inch size, peeled, roughly diced), 1 cup of yogurt (Dahi), 1 tsp of coriander powder, 2 tbsp of Kashmiri red chili powder, and ½ tsp red chili powder to it and blend them all. Do not add any water.

Step 4: Now in a kadai, heat 4 tbsp of mustard oil and 1 tsp of ghee over a medium flame. When hot, add 1 piece of bay leaf (whole), 1 piece of cinnamon (1 inch stick), one black cardamom, 3 pieces of cloves, 3 pieces of green cardamom, 2 pieces of dry red chilies (broken in half), and ¼ tsp of asafetida (hing). Fry them for about a minute.

Step 5: Now, put the marinated chicken in it. Mix them nicely. Cover the kadai and fry them nicely for about 5 to 6 minutes on a medium to high flame. Then, add the masala blend. Mix nicely and cook for 5 to 6 minutes on a low flame.

Step 6: Then, add a cup of water to it. Add salt to taste. Cover and cook the chicken for about 8 to 10 minutes.

Notes

I prefer using thick curd to marinate the chicken pieces. This helps make a smooth marinade. It also adds to the flavor and taste of the rogan josh a great deal.
It is good to dry roast the fennel seeds slightly. This always enhances the flavor of the ground masala.
Ensure that the chicken is cooked nicely over a low to medium flame before adding water to it. This ensures even cooking.
I always add hot water to the chicken. This also ensures proper cooking.
