I discovered this wonderful it while watching a film shoot in Kerala. The crew was tired, the rain constant, and a local caterer brought us hot meals. This particular dish was the highlight. It woke us up. I asked the cook about it, and he grinned, “That’s my mother’s lightning recipe.” He was happy to share it with me.

I laughed, but wrote it down. At home, I tried to make t and after a few attempts got things just right. Now it has become my “wake-me-up” dish—bright, fast, and fiery. I still think of those chaotic, rainy days every time I make it.

Notes

Always choose fresh fish. I typically choose firm fish that does not have a strong smell. Fresh fish makes the nuggets taste better.
I always use fresh white bread. It adds a nice texture and doesn’t take away the taste of the fish. Cut them into thin slices. It will help it mix well with the fish.
Add salt in the right amount while cooking and mixing. Too much salt can spoil the taste.
If you don’t have a food processor, you can use a mixer grinder to blend the fish and bread properly.
While making the nuggets make sure all nuggets are the same size. This will ensure that they cook properly.
