I discovered this wonderful it while watching a film shoot in Kerala. The crew was tired, the rain constant, and a local caterer brought us hot meals. This particular dish was the highlight. It woke us up. I asked the cook about it, and he grinned, “That’s my mother’s lightning recipe.” He was happy to share it with me.
I laughed, but wrote it down. At home, I tried to make t and after a few attempts got things just right. Now it has become my “wake-me-up” dish—bright, fast, and fiery. I still think of those chaotic, rainy days every time I make it.

Step 4: Take 5 slices of bread. Remove the edges.

Step 5: Cut them further into thinner slices.

Step 6: Take a food processor, put the boiled and deboned fish and the sliced bread.

(Pro tip: You can use a mixer grinder if you do not have a food processor).
Step 7: Add ½ tsp of black pepper powder, ½ tsp each of cumin seeds powder coriander seeds powder, garlic paste, ginger paste, and salt to taste.

(Pro tip: Be careful about the salt as you have also added it while boiling the fish).
Step 8: Follow it with 1 finely sliced piece of 1 medium-size onion, 6 pieces of fresh green chilies, ½ cup of fresh coriander leaves, and 2 tbsp of cooking oil.

(Pro tip: Adjust the chilies according to your preference).

Step 10: Take a plate. Grease the plate and your hand with a little bit of oil. Transfer the paste from the food processor. Spread it evenly.

Step 11: Take a knife. Grease it with oil. Cut it into small square pieces.
