Black pepper fish fry refers to shallow fried Rohu or any other fish pieces marinated in a mixture of ginger and garlic paste, lemon juice, chaat masala powder and a specially prepared ground masala. This masala comprises a lot of black peppercorns, red chilies, cumin seeds, cinnamon stick and salt. The marinated fish pieces are fried to perfection for a crispy exterior and a soft interior. The process to make black pepper fish fry at home is quite easy, as you will learn from my simple recipe.

The Ingredients:

  • 1 kg Rohu fish (washed nicely and pat dried)

I had this fish fry for the first time at my neighbor’s place. She is from North India. The fish tasted tangy and spicy but was not too hot. This is not how we usually make fish fry in Bengal. When asked for the recipe, I wrote the steps down along with the tips she shared on a piece of paper and then in my kitchen diary when I got home.

I made the fish fry the very next day since fish and other things are always available in Bengali homes. My husband and my two sons were surprised. They liked the spicy taste and wanted more, and that made me feel extremely happy, and I thanked the lady for sharing the recipe with me.

How to Make Black Pepper Fish Fry? (Step by Step Guide with Images)

Step 1: Grind 3 tbsp of black peppercorns, 1 piece of cinnamon stick (1 inch in size), 3 whole red chilies, and 1 tsp of cumin seeds with salt to taste.

Step 2: Take 2 tbsp of this ground masala powder along with 2 tbsp of ginger garlic paste, juice of 2 big size lemons, and ½ tsp of chaat masala powder.

Making the marinade

Step 3: Mix them nicely with 1 kg of nicely washed and pat dried Rohu fish pieces. Sprinkle a bit of Kashmiri red chili powder on top.

Step 4: Put in the fish pieces one by one in hot mustard oil. Flip and fry on a medium flame for about 10 minutes. Remove when done.

Notes

I have used Rohu fish in the recipe. You can take any fish variety.
Do not use more cumin seeds than I mentioned for a kilo of fish. The dish will become bitter.
Want the fish pieces to be tangier? Add more chaat masala powder and lemon juice to the marinade.
A bit of Kashmiri red chili powder on top of the marinated fish pieces adds to the visual appeal. Do not use food color.
I always fry fish in mustard oil for the rich taste. You can use any variety of cooking oil.
