This recipe came from a college friend who stayed with us during a layover. She suggested that she would make a sweet dish for the kids in the evening. I was surprised to see how quickly she came up with these laddus that were amazingly tasty. I asked for the method and wrote it down.

I made it again the next week. My husband called it a “guest gift,” and the boys wanted it for tiffin. Now, it is our guest-inspired go-to sweet dish. That evening reminded me how friendships don’t just stay in old stories; they also leave behind recipes that quietly enter your family’s regular meals.

How to Make Rava Laddu? (Step by Step Guide with Images)

Step 1: Heat a frying pan on a low flame and dry roast ½ cup of semolina, stirring it continuously for 3 to 4 minutes.

Step 2: Now, add 1 tbsp of ghee (clarified butter) and fry it for another 2 to 3 minutes on a low flame until you smell the aroma and the white semolina starts turning slightly golden.

(Pro tip: Be very careful while roasting the semolina to ensure that it does not burn or its color does not change to deep brown).

Step 3: Transfer the fried semolina immediately to a plate and let it cool.

Step 4: In the meantime, take ½ cup of sugar in a mixer.

Step 5: Grind it to a very fine powder and transfer it to a bowl.

Step 6: Also, grind the semolina, which has cooled down by now, to a coarse powder and pour it into the bowl containing the powdered sugar.

(Pro tip: Semolina cannot be ground into a very fine powder).

Step 7: Then, add ¼ tsp of cardamom powder to it and mix everything nicely.

Step 8: Now, heat 2 tbsp of ghee in a pan and first add 1 tbsp of almond and cashew nuts (very finely chopped) to it when hot. Stir and fry them for about half a minute on a low flame.

Step 9: Now, add 1 tbsp of raisins (finely chopped) and fry them for some time until the raisins plump up a bit.

Step 10: Now, add this mixture to the semolina mixture in the bowl. Include a tablespoon of very finely chopped pistachios in it.

Step 11: Mix everything nicely first with a spoon and then with your hand. Then, take a portion of it and press it a bit hard with one hand to shape a ball first, and then use both your hands to move it in a circular motion within your palms to make a smooth laddu.

Notes

I have used pieces of pistachios for enhancing the taste and look of the semolina laddus. You may skip it.
If it is hard to shape the laddus, you can use a bit more of hot ghee or a mixture of ghee and milk in equal proportion with the mixture.
Using milk in the recipe will allow storing the laddus for two to three days.
Be quick to transfer the semolina to prevent it from burning or becoming brown in color by stopping the cooking process.   
Though I have not, you can add grated and roasted coconut to the recipe. This will add moisture and help in shaping the laddus.
