I got this recipe from a mehndi artist during my niece’s engagement. In the afternoon, while she was having her lunch that she brought from her home, the aroma filled the entire place. When I enquired what she was having, she said it was a chicken sandwich with a chutney she made herself at home. I asked for the recipe of the chutney especially and she happily described the process.

I noted it down on a paper plate. I made it the next day. My husband said it had charm, and the boys said it tasted “like weddings.” Now, it is our celebration chutney we often have with sandwiches. That day reminded me that even those who draw patterns on palms leave flavor behind—with designs that linger on the tongue too.

How to Cook Sandwich Chutney? (Step by Step Guide with Images)

Step 1: Take a clean and dry grinder. Add 2 tbsp of roasted peanuts.

(Pro tip: If you do not have roasted peanuts at home, you can use 2 tbsp of Split chickpeas or chana dal as a substitute).

Step 2: Next, add 1 tsp of normal sugar to the grinder.

Step 3: Follow it with 12 pieces of fresh garlic cloves.

Step 4: Then add a piece of fresh ginger of 2-inch size, diced into small pieces, into the grinder.

Step 5: Now, add 1 tbsp of cumin seeds into it.

Step 6: Then add ½ tsp of salt to the grinder.

Step 7: Grind the ingredients nicely.

Step 8: When the ingredients are nicely ground, add 2 cups of fresh coriander leaves in the grinder.

(Pro tip: Wash the coriander leaves nicely and make sure that you use the stems of the leaves as well).

Step 9: Then add 4 pieces of fresh green chilies to the grinder, each broken in half.

Step 10: Squeeze half a lemon to add about 1 tsp of juice to the ingredients.

Step 11: Finally, add 4 ice cubes to the grinder.

Step 12: Grind the content once.

Notes

If you do not have peanuts at home, you may replace them with split chickpeas or chana dal. Adjust the quantity according to your taste preference.
I prefer using garlic in my chutney. However, you can skip it if you do not like the flavor of garlic.
Use a clean and dry grinder to grind the ingredients.
I usually include the stems of coriander because it adds to the flavor of the chutney.
Adding ice helps in retaining the color during blending. So, do not skip it.
