Cauliflower soup is made with small cauliflower florets, onion, garlic, chicken cube, egg and a few other spices, eventually thickened with corn flour. It is quite easy to make cauliflower soup at home. Simply follow my recipe and surprise your family and guests.

The Ingredients:

I found this recipe in the diary I used during my pregnancy days. While looking for an old doctor’s number, I found a page where I had scribbled it during a craving’s conversation with my neighbor. I smiled and decided to try it after so many years.

My husband said it brought back memories, and my sons laughed hearing that it was a “craving dish.” Now, it is our throwback menu. That faded page reminded me that food memories stay etched even when everything else fades—especially the ones born during the most tender, emotional days of motherhood.

How to Make Cauliflower Soup? (Step by Step Guide with Images)

Step 1: Take a piece of cauliflower and cut it into half. Cut it further into small florets. Wash them nicely and keep aside.

(Pro tip: You may wash the cauliflower florets in saline water. It will kill the insects, if any).

Step 2: Now, heat 2 tbsp of butter in a frying pan or kadai on a medium flame. When it melts, add 1 tbsp of finely chopped onions and 1 tsp of garlic to it. Sauté them for about two minutes or so.

Step 3: Add the washed cauliflower florets along with ¼ tsp of black pepper powder and ½ tsp of salt. Mix and cook them nicely for about 5 minutes on a medium flame.

Step 4: When the cauliflower is cooked nicely, add 4 cups of water to it. Mix and cook for about a minute more.

Step 5: Then, add a chicken stock cube to it and mix nicely.

Step 6: Cook it until the water comes to a roll boil.

Step 7: Cover and cook for 5 to 7 minutes on a medium flame.

Step 8: In the meantime, crack one egg in a separate bowl or cup and whisk it nicely with a fork.

Step 9: Pour the whisked egg slowly to the soup while stirring it continuously with a spatula in your other hand.

Step 10: Now, take another mixing bowl and put 1 tbsp of corn flour in it along with 2 tbsp of water. Mix it nicely to make a smooth slurry.

Step 11: Now, pour the corn flour mixture in the soup as well while stirring it continuously as you did while adding the whisked egg. Let it cook for another 5 minutes or so.

Step 12: Now, add ½ tsp of black pepper powder and mix it nicely.

Step 13: Check the consistency of the soup.

Step 14: Finally, add a fistful of finely chopped fresh coriander leaves to the soup. Mix well and switch off the gas stove.

Step 15: Your healthy and tasty cauliflower soup is ready to enjoy. Transfer it to a serving bowl, garnish it with a few finely chopped coriander leaves again and have it hot.

Notes

I have added chicken stock cube in the recipe. You can use regular chicken cube in its place if you do not have it. 
I stir the soup continuously while adding the egg. It gives a nice texture to the soup just like in restaurants.
Stirring the soup while adding corn flour prevents forming lumps in it and gives a nice and smooth consistency to the soup.
Do not add too much of corn flour to the soup. Cauliflower soup should ideally be quite runny in consistency.
