I learned this recipe from a TV show. The chef explained the steps and ingredients along with the various health benefits of broccoli as a whole or as a soup. I thought it would be a wonderful health supplement for my young kids and wrote down the ingredients and steps in my kitchen diary quickly.

When I made it at home for the first time, my sons were a bit apprehensive at first but after the first sip they liked the creamy and spicy combination of the soup. Now it features often in the winter season as an evening delight.

How to Make Broccoli Soup? (Step by Step Guide with Images)

Step 1: Cut and wash 300 grams of broccoli.

Step 2: Boil it with 1 tsp salt. Strain the water.

Step 3: Melt a cube of butter and add 1 piece of medium-size onion (finely chopped) on a medium flame. Cook until soft and then add 2 pieces of finely chopped garlic cloves. Cook for 2 minutes.

Step 4: Add the boiled broccoli. Cook for 2 minutes. Add water and cook for a minute.

Step 5: Transfer everything to a grinder and make a smooth paste. Transfer it to the kadai along with the boiled water. Bring it to a boil.

Step 6: Add a cup of milk. Let it boil. Add 1 tsp of salt. Mix well.

Step 7: Add 2 tbsp of fresh cream. Bring it to a boil and then add ¼ tsp of crushed black pepper. Mix nicely.

Notes

I always use the stem of broccoli in the soup as well because it contains a lot of fiber.
Do not throw away the water after boiling broccoli. Use it in the soup for added health benefits.
I have used butter to make the dish but you can use regular cooking oil, olive oil, or desi ghee (clarified butter) if you want instead of butter.
If you do not have cream at home, you can add homemade malai to the soup.
If there are kids at home, add black pepper powder while serving the soup to others.
