I came across this recipe from the staff who helped in my sons’ nursery school. She always packed homemade food and sometimes offered me a bite when I went to pick up my son. One day, she brought these delicious tikkas and said it was her comfort recipe.

I asked how to make it, and she explained it lovingly. I made them the very next day at home. My husband said it felt like love and care, and my sons called it “school memory food.” Now, it is one of our favorite evening snacks. That moment reminded me that those who care for children also cook with quiet devotion worth remembering.

Notes

I usually use homemade thick curd to make paneer tikka.
Adding Kashmiri red chili powder gives a nice reddish color to the paneer tikkas.
I have dry roasted the besan a bit before adding. You can use satoo as an alternative as well.
Always use mustard oil for mixing the ingredients. This will render a nice pungent taste and flavor to the paneer tikkas.
If you are using wooden skewers, make sure you soak them in water for at least 10 minutes before using.
