My mother makes a pepper chicken that doesn’t need a single spoon of cream or cashew paste, and for years I couldn’t figure out how she got that much depth into it. Turned out the trick was in the roasting she’d dry roast her whole spices separately, let them cool, then grind them coarse instead of fine, and that’s what gives the gravy its body instead of any dairy.

I picked up her method but couldn’t resist adding my own twist to the chicken itself. A quick marinade with dark soy sauce, black pepper and lemon, then a light corn flour coating before frying something I started doing after making one too many Indo-Chinese style chicken dishes for my kids, who ask for that fried, slightly charred edge every time. It’s not how she makes it, but it’s become how my house makes it, and honestly nobody’s complained yet.

The gravy still leans on the classic base onion, tomato, ginger garlic — but it’s really that roasted pepper masala doing the heavy lifting. If you’ve had a pepper chicken that tasted more like garam masala with a bit of pepper on top, this isn’t that. The pepper is the point here.

The Ingredients:

For marinating and coating the chicken:

  • 1 kg chicken
  • 1 tsp black pepper powder
  • 3 tsp dark soy sauce
  • 1 tsp salt
  • Lemon juice (half a lemon)
  • 1 tbsp corn flour

To fry the marinated chicken pieces:

  • 2 tbsp cooking oil

To make the masala mix:

  • 2 tbsp black peppercorns
  • 1.5 tbsp cumin seeds
  • 1 tsp fennel seeds
  • 4 green cardamoms (whole pods)
  • 4 cloves
  • 2 cinnamon sticks (each 1 inch in size)
  • 4 dry red chilies

To make the gravy:

  • 2 tbsp cooking oil
  • 2 onions (medium size, finely chopped)
  • 2 tsp ginger garlic paste
  • 1 tomato (medium size, finely chopped)
  • ½ tsp turmeric powder
  • 1 tsp coriander seeds powder
  • 1 cup water
  • ½ tsp salt
  • 2 tbsp coriander leaves (finely chopped)
  • 4 green chilies (whole)

How to Make Pepper Chicken Curry? (Step by Step Guide with Photos)

Step 1: Marinate 1 kg of chicken with 1 tsp of black pepper powder, 3 tsp of dark soy sauce, 1 tsp of salt and juice of half a lemon. Cover and leave for half an hour.

Step 2: Coat it with 1 tbsp of corn flour.

Step 3: Fry the chicken pieces on a high flame nicely on both sides. Cover and let it cook for 10 minutes on a low flame.

Step 4: Dry roast 2 tbsp of black peppercorns, 1.5 tbsp of cumin seeds, 1 tsp of fennel seeds, 4 pieces of green cardamom (whole pods), 4 pieces of cloves, 2 pieces of cinnamon sticks (each 1 inch in size) and 4 pieces of dry red chilies on a medium flame until they change color.

Step 5: Grind them to a coarse powder when cool.

Step 6: Fry 2 pieces of onions (medium size, finely chopped) in 2 tbsp of cooking oil on a medium flame until golden. Then add 2 tsp of ginger garlic paste.

Step 7: Add 1 piece of tomato (medium size, finely chopped). Cook until soft and the oil separates.

Step 8: Mix the fried chicken pieces. Then mix ½ tsp of turmeric powder and 1 tsp of coriander seeds powder.

Step 9: Add the masala mixture made earlier by roasting and grinding the whole spices. Mix and cook for 2 minutes.

Step 10: Add 1 cup of water and ½ tsp of salt. Mix, cover and cook on a medium to low flame for 10 minutes.

Step 11: Add 2 tbsp of finely chopped coriander leaves and 4 pieces of whole green chilies. Mix and check the thickness of the gravy. Transfer to a serving bowl when done.

Pepper Chicken Curry Quick Fixes

1. The curry is too spicy; how do I cool it down?

Stir in a few tablespoons of whisked yogurt, heavy cream, or coconut milk to mellow that heat. You can also add a tiny pinch of sugar or an extra squeeze of lemon juice; it balances the heat.

2. What should I do if the gravy is too thin or watery?

Remove the lid, crank the heat to medium-high and let it simmer uncovered for a few minutes until the extra water evaporates and the gravy gets thicker.

3. Why does my dish taste a little bitter?

It is probably the whole spices got over-roasted in Step 4, or the ginger garlic paste scorched. Next time, pull the spices off the heat the second they turn fragrant. If they went dark brown, it is best to restart the blend.

4. Why is the coating coming off in the gravy?

That usually happens when the chicken was not fried hot enough or not long enough in Step 3. Make sure the oil is shimmering before it goes in, then let a proper golden crust form before flipping. Also, letting the fried pieces rest a few minutes before adding them to the gravy in Step 8 helps the coating stay attached.

5. My chicken is dry and tough, not juicy; what went wrong?

Frying and then simmering can overcook chicken pretty fast, especially breast meat. Keep the fry in Step 3 quick, just enough to seal in juices and color the outside, because it will finish cooking during the 10-minute simmer in Step 10. If it keeps drying out, switch to bone-in thighs; they manage the double cooking way better.

Ingredients

Notes

I used chicken pieces with bones in this recipe. If you do not want to marinate chicken, you could use boneless chicken to make the dish.
I put dark soy sauce at the time of marinating because it imparts a wonderful color to the dish eventually.
When the chicken pieces are covered with cornflour, the gravy becomes thicker.
Do not grind the roasted spices into a very fine powder. A coarse mix is better for the texture of the gravy.
