Devil chicken is made with small boneless chicken pieces that are first marinated with turmeric, salt and red chili powder before stir frying slightly. It is then cooked along with diced green, red and yellow capsicums, onions, cherry tomatoes, a variety of sauces and a generous amount of red chili flakes and green chilies along with other spices and finished with finely chopped spring onions for additional flavor.   • 1 tsp oyster sauce
  • 1 tbsp tomato ketchup
  • ¼ tsp salt
  • ¼ tsp black pepper (crushed)
  • 1 tsp red chili flakes
  • 2 pieces of green chilies (finely chopped)
  • Sugar (a pinch)
  • Spring onions (a handful, finely chopped)
  • ¼ cup water (hot)

For garnishing the devil chicken:

  • Spring onions (as much as required, finely chopped)

I came across this recipe at a roadside food stall. The man was making it with ease and several plates were ordered by customers waiting in a queue. I also ordered a plate out of inquisitiveness. The taste and flavor were wonderful and I tried to decipher the ingredients he added to it. I ate it taking my time just to see him make another dish right from the start till the end. I came back home and wrote them down in my kitchen diary.

I tried to experiment with it the next weekend and it surprisingly turned out to be very tasty and appealing. My two sons were overwhelmed and my husband asked me where I learned the recipe from. These were so inspiring for me. Now this dish features often in our evening menu as a snack or as a side dish.

How to Make Devil Chicken? (Step by Step Guide with Images)

Step 1: Marinate 500 grams of small boneless pieces of chicken with ½ tsp of red chili powder, ¼ tsp of turmeric powder and salt to taste. Leave aside for 15 minutes.

Step 2: Stir fry them in 2 tbsp of cooking oil for 5 minutes on a medium flame. Remove when they release their juice.

Step 3: Transfer a bit of the same oil to a wok. Fry 1 tsp each of finely chopped ginger and garlic for 30 seconds. Add and fry 1 piece of onion (small, diced into square pieces) for a minute.

Step 4: Add 1 piece of capsicum (small, diced into square pieces) and diced square pieces of half red bell pepper and yellow bell pepper. Fry for 30 seconds and add 5 pieces of cherry tomatoes (sliced in half).

Step 5: Mix the fried chicken pieces and then add 1 tsp of red chili sauce, ½ tsp of dark soy sauce, 1 tsp of white vinegar, 1 tsp of oyster sauce and 1 tbsp of tomato ketchup. Mix and then add ¼ tsp of salt, ¼ tsp of crushed black pepper, 1 tsp of red chili flakes, 2 pieces of finely chopped green chilies and a pinch of sugar.

Step 6: Add a handful of finely chopped spring onions. Mix and add ¼ cup of hot water. Cook it for 2 to 3 minutes. Transfer it to a plate when it thickens.

Notes

I have taken leg pieces but you can take chicken breast and cut them into small boneless pieces.
I prefer stir-frying the marinated chicken pieces instead of deep frying them with corn flour or refined wheat flour coating.
Cook the devil chicken in the same oil remaining after stir frying the chicken pieces. It will add to the taste and flavor.   
Adding a little bit of sugar neutralizes the acidic taste of the veggies.
Devil chicken is hot and spicy. So be generous with the chilies.
