I discovered this chutney recipe from the yoga teacher during my son’s summer class. She was having this with sandwiches during the break and offered me to have some just to taste. I was overwhelmed and loved its uniqueness and energy. She said it kept her energized and light on her feet. I asked for the method and noted it down.

I made it that weekend. My husband said it was graceful, and the boys called it “twirl food.” Now, it is our rhythm meal. That moment reminded me that dancers feed their spirit in many ways—and their food, too, moves with rhythm, ease, and balance.

Notes

Using fresh ingredients is the key to making green chutney at home. The freshness adds to the vibrant color and authentic taste of the chutney.
The number of green chilies is a matter of personal choice and taste preference. Therefore, if you want your chutney to be hot and spicy add more of them, otherwise, keep it low like I have.
I have also used a few garlic cloves since I prefer it that way. However, you can add more of them if you want a strong garlic flavor in your chutney.
Be careful while grinding the ingredients. If you need to add water, make sure you add it gradually. The ultimate consistency should be smooth and creamy and not too runny.
While using the chutney, always use a dry and clean spoon to scoop it out from the container. This will prevent introduction of contaminants and moisture spoiling the chutney.
