The taste of the dish depends on the quality of fish eggs used. So, choose eggs of fresh fish, preferably of hilsa fish for the best taste and flavor.
Clean the fish eggs with gentle hands. These are very delicate and any damages to the membrane will result in irrecoverable loss of fish eggs.
I cook the dish with mustard oil. This will deliver the authentic taste of the dish. Make sure you heat the oil sufficiently and add the other ingredients after reducing the heat. Remember, proper temperature control will reduce the pungent taste of raw mustard oil.
Stir carefully as and when heeded so that you do not break the delicate eggs. It is better to use a wooden spatula to prevent the eggs from breaking. Mash them a little bit if you want a better texture.
