Mutton pepper fry is usually made with small boneless mutton pieces that are first boiled with onions, whole garlic, curry leaves, green chilies, ginger and garlic paste. It is then fried on a high flame with more green chilies. A special masala mix of black pepper, fennel seeds, cumin seeds and coriander seeds is also added to it before finishing it off with lemon juice, coriander leaves and garam masala. The Ingredients:

To cook mutton:

  • 500 grams mutton (boneless, cut into small pieces)
  • 1 tbsp cooking oil
  • 12 pieces curry leaves
  • 12 pieces garlic (peeled, whole)
  • 1 piece onion (medium size, finely sliced)
  • 1 tsp ginger garlic paste
  • 1 tsp green chilies (crushed)
  • ¼ tsp turmeric powder
  • 1 tsp salt
  • ¾ cups water

To make the ground masala mixture:

  • ½ tsp fennel seeds
  • 1 tbsp black peppercorns
  • ½ tsp cumin seeds
  • 1 tbsp coriander seeds

To cook mutton pepper fry:

  • 1 tbsp cooking oil
  • 4 pieces green chilies (slit from the middle)
  • 1 tsp coriander leaves (finely chopped)
  • ½ tsp garam masala powder
  • ½ lemon (juice)

I learned this recipe from a lady I met in the local market one day while we were both buying mutton. She requested for boneless pieces which made me ask her what she was planning to cook with it. She then described the recipe and said she would present it to the guests coming over for a party at her home in the evening.

I too made the dish the same day, though I did not have boneless mutton pieces. The result was quite fascinating, with the aroma filling the entire kitchen that dragged my sons toward the kitchen. When I served the dish to them, they were overwhelmed, just like my husband. Now this item features in our party menu as well!

How to Make Mutton Pepper Fry? (Step by Step Guide with Images)

Step 1: Fry 12 pieces of curry leaves and 12 pieces of whole, peeled garlic in 1 tbsp of cooking oil in a pressure cooker over a medium flame for 1 to 2 minutes. Also fry 1 piece of medium-sized, finely sliced onion until soft.

Step 2: Add 500 grams of boneless mutton (cut into small pieces) along with 1 tsp of ginger garlic paste, 1 tsp of green chilies (crushed), ¼ tsp of turmeric powder and 1 tsp of salt. Fry on a high flame until mutton changes color.

Step 3: Add ¾ cups of water. Close the lid and cook on a medium flame for up to 4 whistles.

Step 4: Dry roast ½ tsp of fennel seeds, 1 tbsp of black peppercorns, ½ tsp of cumin seeds, and 1 tbsp of coriander seeds on a medium flame until golden. Transfer and spread them on a plate and grind them when cool.

Step 5: Fry 4 pieces of slit green chilies in 1 tbsp of cooking oil for a minute. Add the mutton with the water and cook on a high flame until dry.

Step 6: Add the ground masala mix, a handful of finely chopped fresh coriander leaves, ½ tsp of garam masala powder and squeeze half a lemon. Mix, switch off the flame and transfer it onto a plate.

Notes

I have taken boneless mutton but you can use mutton pieces with bones.
Let the curry leaves crackle first and then add the garlic cloves to it.
I have used crushed green chilies in the recipe for added taste and flavor. You may replace it with green chili paste.  
You may use butter or ghee to make this dish instead of cooking oil.
