Once, I visited a local sari store with my sister-in-law to buy saris and get a few blouses stitched. While we were waiting for our blouses to be stitched, the owner of the store came up with these fresh homemade sandwiches with a cup of hot tea. That smell alone pulled me in – impossible not to praise her kitchen skills. She said she had made them from scratch, grinning wide. When I asked about the recipe, she jotted it down without fuss.

I gave it a try the following afternoon, right before tea. It went great with chai, according to my husband and my kids wouldn’t stop begging for seconds. Ever since, we’ve turned to this fish sandwich every time teatime rolls around. Who’d have thought buying a saree would lead to something so tasty? Not just cloth came home that day – there was joy, spice, and a moment worth keeping.

Notes

I picked Indian mackerel for this sandwich - though you could go with other varieties of fish instead, like pomfret, with fewer bones.
Even though I went with cooking oil, you could try butter when grilling the sandwiches. It adds to the taste and flavor significantly.
Plain white bread is good to use to make these sandwiches, though you can use sandwich bread or even a whole-grain loaf if that is what you prefer.
If you want more kick, toss in some chopped green chili along with mustard sauce.
